10 | Four Seasons Hemet Herald | March 2019 | Celebration of Wine: Wine was properly celebrated Saturday night Feb. 9, with the help of Falkner Winery's, Teri Lee, Tour Manager, her assistants, Traci Pawlak, and wine maker Shane Sevier. The event opened with a wine and cheese social time and the tasting of a slightly sweet Rosé wine. To begin, refreshing cucumber and cream cheese appetizers were paired with an easy drinking Viognier, followed by a yummy endive and chicken salad bite accompanied by a slightly spicy Chardonnay. Next, an award winning Syrah, dark in color and very flavorful, was paired with a mushroom cup stuffed with sausage and breadcrumbs. As the celebration continued with the sounds of clinking glasses and praise for the wine and food, a Super Tuscan Amanté was served with the elegant flavors of black cherry and raspberry. The Amanté was coupled with a tasty beef ravioli with marinara sauce perfect to compliment this red. After that, came a large meatball with luscious brown gravy paired with a silver medal winning Meritage-Bordeaux blend. To finish off the evening a hot mulled wine called Hot Lips was poured. As guests tasted the hot wine, a port was served. To the surprise of all, the port was poured into the hot wine creating a mouth-watering slightly sweet taste. The German spice cookies and bites of chocolate paired nicely with this sweet delight. There was much praise for the delightful bites Francisco's prepared from the kitchen. The evening was perfectly planned by Irene Chapman, the Chair of the event. This was truly a wonderful evening festival to celebrate the enjoyment of wine. Call for Volunteers: We've all heard the saying, a secret to living a long and fulfilling life is social interactions with family, friends, and neighbors. The social committee is devoted to offering a variety of activities for everyone in Four Seasons to support longevity and a healthy life. Volunteers are needed to sustain the events planned for this year, 2019, especially the Ladies Luncheon, May 4, and the Fourth of July celebration. Many hands make light work so come enjoy working with a committee. Social Committee INTRODUCING IRENE CHAPMAN I was born in the Bronx, New York and grew up in northern New Jersey. After attending Syracuse University and Cornell I moved to Long Beach, California. I began a career in payroll at Los Alamitos General Hospital and during my career I served as Director of Payroll for CKE Restaurants, Inc., a Senior Consultant for PeopleSoft, Inc., Director of Payroll for Transamerica Corporation, and Payroll Manager for The Pillsbury Company. I met my husband, Dennis, in 1980 and we lived in Long Beach, Huntington Beach, Minneapolis, Long Beach (again), Laguna Niguel, and Oxnard before moving in 2006 to the PebbleCreek senior community in Goodyear, Arizona. I started my own payroll consulting company in 2007 and also became a home- based travel agent. I am a Past President of the American Payroll Association (2003). Currently, I am APA's Secretary and a member of its National Speakers Bureau. I have presented workshops at many APA chapter, statewide, and national events, as well as at other payroll industry and software user-group conferences, and I continue to teach payroll classes for the APA. Dennis and I were married for 33 years and traveled extensively around the world before he passed away in 2015. After the loss of my husband I moved back to southern California and Four Seasons Hemet in 2016. I am active on the Social Committee and enjoy Mah Jong, traveling, cooking, wine and golf. I have one stepdaughter, Cathy, three grandchildren (33, 21, and 16) and one great grandchild (six months) with another on the way.
