14 | Four Seasons Hemet Herald | JUNE 2019 | June is busting out all over, or a least that's what the song says and after the 30th of this month we will begin the second half of 2019 — where did it go? The Bistro committee wishes to thank James Hatcher, our BOD Liaison, for his commitment and wit while helping us wend our way these past two years. You will truly be missed, and we also send our congratulations as you take over your new duty as President of the BOD. The Social club did an outstanding job in May with the "Hollywood Revisited" luncheon. I hope you didn't miss it! The program was wonderful, there were beautiful gowns and great music, the Ballroom decorated beautifully, and tuxedo-clad gentlemen escorted us to our table. Then we enjoyed a special treat for lunch — spinach quiche with a green salad served in a handmade delicious won ton cup, finishing with fresh strawberry shortcake for dessert. Kudos to all involved. I also learned that quiche may be correctly served cold, room temp or hot. I did not know! The group named Stone Soul will have the patio jumping with their concert on June 8. Please check out the special menu for you to order in advance and pick up that evening! It has now been approved that starting June 21, the Bistro will be open on the third Friday of each month until 7 pm, instead of closing at 3 pm as in the past. Although it may have been his last request for the day — after the BOD meeting had adjourned, the winning names for "Free Sunday Brunch for Two" was drawn by Russ Brown, and the lucky winners are Perry and Carla McNichol. May I add a special thank you to Russ and the BOD board for their leadership and dedication for positive actions for Four Season in Hemet. A profile of those who help make Four Seasons all that it is will be part of my monthly message. First on my list is Francisco Aguirre, owner and Chef of the Bistro. Francisco Aguirre, originally from GuanaJuato, Mexico, immigrated to Santa Ana, CA. He worked at high-end restaurants including The Revere House in Tustin, and eventually became sous chef at the Turnip Rose in Orange. He moved to Hemet in 2002, when he was offered the job of running the Elks Lodge #1740 restaurant, remaining there until 2007. Early that year he was offered the opportunity to take on the Four Seasons' Bistro, growing it to what it is today. He offers the daily Bistro menu, Tuesday, Thursday and Friday night special meals, Second Sunday Brunch, all the Banquet and Ballroom parties and requests for food to go. With what free time he has, Francisco enjoys watching boxing and soccer, traveling in California, Nevada and some parts of Mexico. His dream when he retires is to be in a place where it's warm year round and there are lots of COLD drinks to enjoy. He is proud of his cooking — it has provided a wonderful life for him, Margarita, his wife of 35 years and their three boys. The residents of Four Seasons shout out our thanks to you Francisco.
