INGREDIENTS
4 (10-inch) spinach, sundried tomato or other
flavor wraps
6 to 8 ounces hummus
1 to 11/2 Cups loosely packed spinach leaves
2 Cups chopped (1/4 inch) or shredded cooked
chicken breast
½ Cup matchstick or shredded carrots
½ Cup chopped (1/4 inch) unpeeled cucumber
½ Cup thinly sliced radishes
Optional ingredients in addition to above or as
substitute ingredient
2 Tablespoons pesto or chopped fresh basil
or mint leaves
1/4 Cup Tzatziki
1/2 Cup chopped tomatoes
Substitute 2 Cups white beans, a mild
cheese or a combination of both for the chicken.
DIRECTIONS
Lay out wraps on a flat surface.
Spread hummus evenly over
wraps being sure to spread
to edges, using one fourth
for each wrap. Place a row of
spinach leaves down the center
of each wrap. Next arrange ½
Cup of the chicken on top of the
spinach on each wrap. Sprinkle
hot pepper sauce over the
chicken, if desired. Top with
carrots, cucumbers, radishes
and/ or any other ingredients,
making sure to evenly divide
between the four wraps.
Roll up wraps tightly. I like the
burrito style wrap.

Here is a delicious and quick dish that is both healthy
and satisfying. The recipe can easily be doubled for a
crowd or halved for two. It may also be tailored to your
individual taste. I used garlic hummus but you can use
any flavor from regular to a spicy jalapeno. Don't like
some of the vegetables in the recipe? Then switch them
for something you like. Just be sure to keep a variety of
flavors and textures . Want vegetarian? Then substitute
white beans and/or a mild cheese for the chicken. This
dish pairs well with black bean salad. What, don't have
a good recipe for black bean salad? Never fear, the next
issue of Chef 's Corner will contain a fabulous recipe.
