20 | SUN LAKES LIFESTYLES | JUNE 2020 | Safety Advisory The Safety Committee is anxious to resume our duties in the (hopefully) near future. In the meantime, we would like to remind residents to make sure they keep sidewalks clear to allow pedestrians to walk freely without having to walk in the street, on your grass, or in your flower beds. This includes trash bins, vehicles, or anything else that would block the sidewalk. We are not as sure-footed as we once were and navigating obstacles — especially with our pets — could cause an accident. I have been asked about Securitas: what do they do/what do they NOT do? Very soon the Board will publish a list outlining their DO/ DO NOT tasks. Remember, Securitas is a community patrol, not a security company. If you see something, don't hesitate to call 911 to report. Of course you may also call Securitas, but depending on the situation, they may also contact Banning PD. We hope you are well during this unprecedented time in our lives — it seems forever, but soon we will be back to our normal routines. Do you remember what it was like to saunter into the Sandwedge and enjoy breakfast with friends or a delicious lunch after a round of golf? Or bellying up to the bar for a cocktail, a glass of wine, and a fun conversation with Marsha behind the bar? We've all missed that and we know it'll be back soon. When it does, we will have the added excitement of welcoming our new chef, Hugo Salazar. Hugo graduated in 1999 from Le Cordon Bleu Culinary School in France and began his culinary career in Key West, Florida. His craft lead him across country to California and the Koi Restaurant in West LA where he specialized in Asian-inspired food. He also worked with Porto's Cuban Bakery honing his pastry skills before coming to the desert. His first job was as a Sous Chef at Palm Springs Convention Center. He moved on to the Kaiser Grill, then BaBaLoo's Lounge, a Peruvian and Cuban-inspired restaurant where he helped build and expand the menu. In early March, Hugo came to Sun Lakes, but we didn't have much time to get to know him as the restaurant was shut down not long after he started. But that didn't deter Hugo. He has been working behind the scenes to get up to speed so that when the Restaurant and Lounge do reopen for all of us to enjoy, he will be ready. I asked him to share a little bit more about himself. His favorite dish to cook is BBQ ribs. He believes that they "warm the inner soul" plus they are very versatile and can be combined with just about anything. I also found out that he's a bit of a wine enthusiast. He told me that one of the things he likes to do when he's not working is to drive up the coast to the Paso Robles wine country to sample and expand his wine collection. I, for one, am a huge fan of Paso Robles wines and can't wait to share his wine expertise. Please plan to come in and welcome Hugo to Sun Lakes as soon as you can, then stick around and enjoy his culinary magic. Until then, here is a recipe for another one of his other favorite dishes, just in time for summer entertaining. Enjoy! Restaurant & Lounge Advisory DIRECTIONS 1. Bring water to a boil then add couscous, set aside until bloomed then chill 2. Blend together olive oil, balsamic vinegar, nutmeg, salt & pepper in a small bowl and whisk well 3. In another bowl, combine all the ingredients except the dressing 4. Slowly add dressing making sure everything is covered well 5. Serve on an iceberg lettuce cup Couscous Cucumber Salad INGREDIENTS 8 oz couscous 8 oz water ½ head of celery & leaves 1small cucumber diced 1small tomato diced 2 tbsp basil chopped 2 tbsp cilantro chopped 3 oz balsamic vinegar 4 oz extra virgin olive oil ¼ tsp nutmeg ¼ tsp salt & pepper GET-TOGETHER GROUP: Thank you to all the wonderful people who responded to the Get-Together Group with Carl Parish.
