Stacy and her staff at the Kopper Kettle Bistro recently celebrated their first anniversary here Sept. 4. Stacy is extremely energetic, owning and operating not only the Kopper Kettle Bistro but also the Kopper Kettle in Yucaipa. Stacy works seven days a week and thrives on her crazy schedule. She is hands-on at the restaurants — cooking, waiting tables, dishwashing, to name a few — and loves every minute of it. Stacy's mom owned and operated Kopper Kettle for 35 years before Stacy bought the restaurant in June, 2019. Imagine being a new entrepreneur and just three months later, diving head first into another venture, Kopper Kettle Bistro. Needless to say, residents and staff welcomed her and her staff with open arms. The changes were amazing. Our original sandwich shop became a real restaurant. We were now seated by a hostess, waited on by a very professional wait staff with big smiles, and offered great menu choices. It was an instant hit! Not to mention, The Bistro opened seven days a week with regular hours that we can rely on. She has a real connection with Four Seasons residents. Knowing some of us may not always be able to get to a grocery store, Stacy offers some basic foods at the Bistro, such as eggs, milk, bread. This sure comes in handy when you find yourself short of something in your own kitchen. Stacy praises her customers and their generosity during this pandemic world we now live in. The delivery orders have kept the restaurant afloat and she is so grateful for the business. She has such a positive attitude and can reinvent what used to be into what can be. Pastries and catering are her passion. Stacy has many ideas for the Bistro and all of us here at Four Seasons, including home-churned ice cream straight from her kitchen. When we can get back to some kind of normal after COVID-19, we'll see more new ideas unfold. She is very flexible with her menu and is open to suggestions on dishes that residents have asked about.
