FOUR SEASONS BREEZE | JANUARY 2021 25 INGREDIENTS • 1½ Tablespoons vegetable oil • ½ Cup chopped white onion • 2 garlic cloves, minced • ¼ Cup chopped bell pepper • 1-pound lean ground turkey (preferably 93/7) • 1 Serrano pepper, chopped • 1 ½ Cups diced potato (about 8 ounces) • 1 teaspoon cumin • ½ teaspoon oregano • ½ teaspoon marjoram • ½ teaspoon paprika • ½ teaspoon cayenne pepper • 1 Tablespoon tomato paste • 1 can (14.5 oz) diced fire-roasted tomatoes • 2 Tablespoons beef flavor Better Than Bouillon or one beef bouillon cube • Salt and pepper to taste • 1/3 Cup chopped cilantro, optional • Optional toppings may include sour cream or con crema, shredded cheese, chopped fresh tomatoes, sliced or chopped olives Heat oil in a large skillet over medium heat. Add the onion, garlic and bell pepper to the hot oil. Cook and stir until softened, about 5 minutes. Crumble the ground meat, into the skillet breaking up any large clumps. Cook and stir until all the meat is completely browned, from 8 to 10 minutes. Add the diced potatoes and Serrano pepper. Cook and stir until the potatoes are cooked, but still firm, about 5 to 6 minutes. Stir in the cumin, oregano, marjoram, paprika and cayenne, cook about 30 seconds. Add the tomato paste cooking and stirring an additional minute. Add the tomatoes and bouillon, stirring to mix well. Cover the skillet, reduce heat to low and cook until the potatoes are completely cooked and the mixture is heated through, about 5 to 10 minutes. Season with salt and pepper to taste. Mix in chopped cilantro. Serve as a main dish with rice, beans, and/or a salad. Or serve as a burrito or taco. Picadillo Picadillo By Irene Welker This month's recipe is a Spanish style hash called Picadillo. The dish usually contains ground beef and potatoes cooked in a tomato sauce. It's a simple dish with countless variations. Cuban versions usually contain olives and raisins. The common thread is that all the ingredients are chopped before cooking. It is quick and easy to prepare. There are no hard or fixed rules for Picadillo. The cook can substitute ingredients based on taste preferences. Measurements are a guideline. Don't like spicy foods, then leave out the Serrano pepper or substitute a mild pepper like Pasillo or Anaheim. This recipe is a reduced calorie version with less fat. Lean ground turkey breast has been used instead of beef. The seasoning has been amped up to offset the mild flavor of turkey. Best of all there are only 243 calories per serving. Serves 6. Note: It would be easy to make this a vegetarian dish by using vegetarian crumbles, grounds, or vegetarian ground "meat." DIRECTIONS
