It feels good to have a time where the eating can be cut back. Why not think about nibbling for a while. Talking with other Happy Cookers, we thought minimize portions not flavor. So this month's focus on our Happy Cookers video will show the following ideas. At Christmas, my sister-in-law, Tami, made some amazing appetizers that fit in several diet regimes. They were fun, easy, and can use many leftovers from the refrigerator. With large toothpicks, she pierced a cherry tomato, a cooked cheese tortellini, and a small square (¼ inch square) of mozzarella. Next, she combined ¼ cup balsamic vinegar (I used fig) and ¼ cup pesto in a bowl. She then drizzled the mixture over the skewers. Yummy! Try switching in your own ingredients. Are you wanting to enjoy chocolate but not overdo it? Try dusting your almonds with cocoa powder. Or, if you are wanting to go a little further, try dipping a beautiful strawberry in melted chocolate. If you dip the side of the bottom half of the berry and then the other bottom half on the side, it can make a heart shape of chocolate and half the calories with vitamin C! Lilly's makes a great no sugar added chocolate line. Clark's nutrition in Loma Linda has a fantastic selection. Make sure the berries are very dry, no water. Ready in 30 minutes DIRECTIONS • Spread mayo onto 1 side of roll. Place a slice or two of ham and slice of Swiss cheese in roll. Replace the top of the rolls and bunch them closely together into a baking dish. • In a medium bowl, whisk together poppy seeds, Dijon mustard, melted butter, onion powder and Worcestershire sauce. • Pour sauce over the rolls, just covering the tops. Cover with foil and let sit for 10 minutes. • Bake at 350 degrees for 10 minutes or until cheese is melted. Uncover and cook for additional 2 minutes until tops are slightly browned and crisp.
