8 SOLERA DIAMOND VALLEY | FEBRUARY 2021 By Dick Roppé, Resident In December, Melissa sent out a blast with some ideas for having a COVID-free New Year's Eve. One of her suggestions was hosting a "virtual baking session." I used that idea in early December when I got together with my granddaughter Chloe on Facetime, and together we did some Christmas baking. Chloe baked some cookies using the same almond flour recipe that I used to create a Norwegian kransekake. My creation, that I named the "Leaning Tower of Oslo," is most often referred to as a Norwegian wedding cake. When completed, it is iced and adorned with small Norwegian flags. A Christmas Ck-Off By Dick Roppé, Resident Then, in another blast on the last day of 2020, Melissa made another suggestion - that neighbors step out on their driveways at 3:30 in the afternoon for a New Year's toast, probably realizing many of us wouldn't make it to midnight. Corte Fiesta took the challenge. The Larsons set up a table in their front yard and the festivities began on schedule. Note: Others liked the idea. Enjoy the photos from Corte Cidra as well. The Riverside Fire Department was at the Lodge on December 18 to collect the toys you donated to The Sparks of Love.
