In December, Melissa sent out a blast with some ideas for having
a COVID-free New Year's Eve. One of her suggestions was hosting a
"virtual baking session." I used that idea in early December when I
got together with my granddaughter Chloe on Facetime, and together
we did some Christmas baking. Chloe baked some cookies using the
same almond flour recipe that I used to create a Norwegian kransekake.
My creation, that I named the "Leaning Tower of Oslo," is most often
referred to as a Norwegian wedding cake. When completed, it is iced
and adorned with small Norwegian flags.

Then, in another blast on the last
day of 2020, Melissa made another
suggestion - that neighbors step out on
their driveways at 3:30 in the afternoon
for a New Year's toast, probably realizing
many of us wouldn't make it to midnight.
Corte Fiesta took the challenge. The
Larsons set up a table in their front yard
and the festivities began on schedule.
