42 | SUN LAKES LIFESTYLES | APRIL 2021 | Happy Cookers How About Tea? One of the most relaxing and intimate gatherings are often centered around pouring steaming hot tea into a favorite cup or mug. The accompaniment of small bites of sweet and or savory items just seems to make the time perfect for one person or a group. Happy Cookers have enjoyed many teas in the past. Other Sun Lakes clubs and local churches have also hosted superb events. In this month's video we will focus on the concept that an afternoon tea can be anything from small versions of leftovers to the latest in tasting surveys. Next to water, tea is the second most consumed liquid in the world. Chinese historical legend says that the very first cup of tea was drunk in 2737 BC by the Chinese emperor Shennong, who was thought to be the father of Chinese medicine. In four thousand years, tea has gone from being valued as a medicinal product to the benefactor, an enemy of worker production, to current knowledge that touts tea as the bearer of amazing medical benefits. It is not our imagination, we really feel better after taking time to relax and have a pot of tea. So why not sit six feet away and have tea with your buddy and also enjoy some nibbles with it. Sauce Ingredients: 3 Tbsp. sour cream 2 Tbsp. horseradish sauce 1 Strong pinch kosher salt 1 Strong dash black pepper ¾ Tsp. lemon Juice Sandwich Ingredients: ½ Lb. boneless steak, cut into two portions Salt and pepper to taste 4 Slices wheat bread or two slices open-faced 4 Radishes 1.5 Cups Augula Directions: 1. Mix all the sauce ingredients together in a small bowl. Set aside. 2. Season the steak with salt and pepper to taste. Lightly oil a skillet and set on medium heat. When the skillet is hot, sear the steak for two minutes on both sides. Hold the short ends down on the skillet with a pair of tongs for 10 seconds, just long enough to seal in juices. Set the steak aside on a plate to rest. 3. Toast the bread. Thinly slice radishes. 4. Spread sauce on bread and arrange some arugula on top of the sauce and follow with a layer of radish. Slice steak into ½ inch wide thin strips and place upon radishes. Add another layer of radish and argula. Then cover with top layer of bread and spread. 5. Cut sandwiches into halves or quarters. Citrus Flavored Honey Taken from The Pleasures of Tea/ Victoria Magazine • 1 16 oz. jar honey • Zest of 2 lemons or oranges. In a small saucepan stir the honey over medium heat until warmed. Place the zest in heat-proof jar. Pour in warmed honey. Cool to room temperature. Cover tightly and let stand for two weeks. Serve on biscuits or scones with butter or clotted cream. Yummy!
