In the meantime, the video "Lets Get Cooking with Wendy Ditchfield" will continue. This month's activity will take us to the tables of early colonists and pioneers. We need to remember that food availability was dependent upon location. Meats were dried early on and pork was one of the first live animals imported from Europe. Some pigs ran away and became wild thus causing problems for local Indian plantings. Venison, turkey and fish were popular proteins early on as well as dried beans. Even chickens were brought along on the Mayflower. Learning this, I researched recipes and traditions where settlers used local goods to make meals. We will travel from the Deep South to the Oregon Trail with this month's recipes. Enjoy them and watch our monthly video. But it is inspired by the actual recipe and is considered to be very similar to what it would have been. Beans were an important food item for pioneers. They were long storing and provided protein and nourishment, along with bouts of gas! Ingredients: • 1 large bowl of canned lima, red kidney, white northern, lima, and butter beans • Pork and beans • 1 lb. bacon, chopped • large onion, chopped • Garlic, chopped • 1 cup brown sugar • 1/2 cup vinegar • 1/2 tsp mustard What to do: 1. Mix equal parts of canned lima, red kidney, white northern, lima, and butter beans. 2. Add pork and beans to make 16 ounces of bean mixture. 3. Fry the chopped bacon until cooked, but not crisp. 4. Pour the bean mixture into a large pan with bacon and chopped onions and garlic. 5. In another pan, mix the brown sugar, vinegar, and mustard. 6. Cook the mixture for 15 minutes. 7. Pour the prepared liquid into the bean mixture and bake for an hour.
