8 SOLERA DIAMOND VALLEY | MAY 2021 By Clare Mendez, Resident Last month a small group of volunteers conducted inventory on the supplies in the EPAC shed. Minio Garcia kept busy from start to finish installing new shelving to organize the totes, boxes, lighting and medical supplies. John King and Daniel Mendez did a lot of the heavy lifting and tested the portable flood lights and generator while Edith Reed and I conducted the inventory. Due to COVID-19 restrictions we were unable to work together as a team until now. It was a task that was on the to-do list for over a year. So, folks, we hope you feel some relief knowing we have medical supplies, water, miscellaneous helpful tools, and the knowledge to use the equipment in case of a large earthquake or other natural disaster. As is the motto for the EPAC Committee, it is always best to be prepared. T•E•A•M•W•O•R•K By Theresa Rossetti, Resident Remember when TP was on everyone's shopping list? Well, so was bread. Thus, began the bread baking craze of 2020. Yeast was in high demand as many people turned to homemade instead of store bought. People boasted about making starter for sourdough bread, reveled in homemade pizza dough, fluffy waffles and cinnamon rolls. Some kitchens smelled delightful, the scent of fresh bread in the air. But what if you didn't want to get that involved, or you couldn't find yeast, but still wanted a nice, yeasty piece of bread every now and then? Have I got a recipe for you! Experimenting On Unsuspecting Friends Part Three: Beer Bread Beer Bread Ingredients: 3 cups all-purpose flour ¼ cup granulated sugar 1Tbsp. baking powder 1 tsp. salt 1 can of beer ½ stick butter, melted Instructions: 1. Preheat oven to 350 degrees F. Grease a 9 x 5 loaf pan. 2. Add flour, sugar, baking powder and salt to a large bowl and whisk to combine. Add beer and stir with a wooden spoon until just combined. 3. Pour half the butter into the greased pan. Add the batter and pour the remainder of butter on top of the batter. 4. Bake on center rack for 50-60 mins., until top is brown and crispy and a toothpick inserted in the center of the loaf comes out clean. 5. Remove from oven, let sit five minutes, remove from pan, serve and enjoy! Substitutions Lemon/lime soda instead of the beer or Root Beer instead of the beer Add ¼ cup honey when adding the beer, reduce the butter to ¼ cup, putting half of the butter in the pan, the rest on the top of the batter. Additions: Add some fresh or dried herbs, rosemary is particularly good. Add in a cup of shredded cheddar cheese. Tacos and Tailgate
