Experimenting On Unsuspecting Friends Part Four: Ingredients: 32 oz. cubed Colby-Jack cheese 1 jar Kalamata olives 16 oz. good quality Italian dressing 1 Tbsp. Italian seasoning ½ tsp crushed red pepper flakes 6 large garlic cloves, whole but crushed 6 fresh rosemary sprigs Instructions: Combine all ingredients except the rosemary in a large bowl. Cover and refrigerate for eight to 24 hours. After marinating, you can divide the mix into as many portions as you chose, Mason jars are a good choice. If dividing, make sure to divide the garlic and any dressing still in the bowl evenly. Add the rosemary sprigs, dividing evenly again. Serve whenever you like; it can be stored in the refrigerator for up to two weeks. By the way, if you don't have rosemary in your garden, feel free to come to my house and snip some from my front yard. I have plenty! Use any cheese, remembering that mild ones will absorb the marinade well. Don't like Kalamata olives? Substitute at will. If you make your own dressing, use good quality ingredients, as the dressing is a prominent flavor in the recipe. Cinco de Mayo Marinated Cheese & Olives Substitutions
