46 | SUN LAKES LIFESTYLES | AUGUST 2021 | Happy Cookers Have you tried to come up with a dinner or lunch idea that is easy, engaging, and doesn't break the bank? Are you experiencing the dog days of summer? Why not create a hot dog bar? Have buns and dogs, brats, or sausages ready and put several dog toppers on the table. That will be the theme for the Happy Cookers August meeting. Members will be encouraged to bring a topping for hot dogs. It should be fun and delicious. Many recipe ideas can be found on the internet. The Happy Cookers first meeting since COVID was fun. Albertsons brought freebies and discussed their new pick-up- groceries program. Members brought favorite picnic foods. Wendy Ditchfield demonstrated engaging picnic ideas. She has passed her position of creating monthly meetings to Mary Miller until elections can be held. Mary will be demonstrating her vegetarian chili recipe that is a family favorite as a topping for hot dogs at the Aug. 27 meeting. Happy Cookers meetings will continue on the fourth Friday of the month at 11 am in the South Clubhouse. See you soon. The recipe below came from the last Happy Cookers meeting and Wendy Ditchfield's Let's Get Cooking picnic video. Ingredients: • 8 skinless/boneless chicken breasts • 4 Tbsp. butter • 2 Granny Smith apples, peeled, cored and diced • 6 stalks celery • 1 cup coarsely chopped walnuts • 1.5 cups mayonnaise • 1 Tbsp. orange zest • 1/3 cup fresh orange juice • 16 pieces of sandwich bread Directions: Preheat oven to 350 degrees F. Place chicken breasts and butter in a baking pan, cover and bake until cooked (approx. 30 minutes). Cool and dice into ½ inch pieces (or use prebaked shredded chicken). In a large bowl, combine chicken, apples, celery, and chopped nuts. In a separate bowl, whisk mayonnaise, orange zest, and orange juice together. Add to chicken mixture and toss well. To assemble, spoon the chicken salad onto a slice of bread and top with a second slice. Cut into quarters. Makes 8 sandwiches. We put scoops of the salad on single leaves of Romaine lettuce. It was so refreshing. Try mini pitas. Recipe Waldorf Chicken Salad Sandwiches Adapted from Winnie the Pooh's Picnic Cookbook, Inspired by A.A. Milne
