Chef 's Corner By Randy Balt Red Snapper with tomatoes, olives & onions This one-pan recipe is full of fresh satisfying flavors. After tasting it you will look forward to making it a second time for your friends. Serve it with a salad and lemon orzo. It's a perfect summertime meal. Enjoy! Prep Time: 10 min. • Cooking Time: 20 min. • Level: Easy • Serves four INGREDIENTS 1⁄4 cup extra-virgin olive oil 1 medium yellow onion, peeled and slivered 4 8-oz. center-cut skinless red snapper filets 1⁄4 cup dry white wine 1⁄2 bunch parsley, chopped 1 14-oz. can diced tomatoes Pinch red pepper flakes 1⁄4 cup black olives, sliced Salt Directions 1. Heat oil in a large skillet over medium heat, add onions, and cook, stirring occasionally, until onions are fragrant and slightly soft, about two minutes. Add snapper, skinned side up, and cook until lightly golden, about two minutes. Turn fish and cook other side another two minutes. 2. Add wine, tomatoes, olives, half the parsley, and red pepper flakes to the pan with the fish. Season to taste with salt and bring to a simmer over medium heat. Reduce heat to medium-low and simmer, partially covered, until fish is just cooked through, 10–15 minutes, spooning sauce over fish as it cooks. Uncover and simmer until sauce has thickened slightly, about 3 minutes. Adjust seasonings and sprinkle with remaining parsley. 3. Serve over a bed of rice. Did You Know? Emergency Response: Did you know that the buildings at the Lodge have differing street addresses? The Lodge building is 1518 Four Seasons Circle, the Salon & Fitness Center is 1520 Four Seasons Circle and the Recreation Center North is 1528 Four Seasons Circle. If a resident has an emergency on the Lodge grounds, you will need to give the 911 responder the address of the correct building. Lisa Lynn, our General Manager, has verified that first "responders have access to the gate in between the Lodge and Spa Building and they have access to both buildings with a Knox Box key (master key kept in a secured box to which that only the Fire Department has access). We are in the process of having a sign prepared for the pool area that has the emergency information, as required per the new California law, including the address for the spa building for pool area emergencies.  In addition, Police and Emergency responders have access for the vehicle gates. As a reminder, the vehicle gates have a back up battery and will open during a power outage." Bingo: Did you know that the City of Beaumont sponsors bingo every Friday from 10:30 am until 12 noon? Donations are 50 cents per card. No daubers are involved. You will be playing for household items! It will be at the Albert A. Chatigny Center, 1310 Oak Valley Pkwy., Beaumont, CA, 92223. Summer Concert: Did you know about Beaumont's free Summer Concert Series? They start on the Fourth of July at 5 pm at Stewart Park on 9th and Orange in Beaumont. The Basix and Little River Band will be the lead-off celebrities. The remaining concerts begin at 7:30 pm and are held on Wednesday evenings. You can enjoy food from Market Night vendors or bring your own. Enjoy Wilson Phillips on July 10, Uncle Kracker on July 17, Leann Rimes on July 24, Berlin and Patty Smyth & Scandal on July 31, and the finale, Rude Boy: The Music Lab on Aug. 7. Bring lawn chairs or blankets and enjoy. Quotidian: Finally, did you know that the word "quotidian" (kwo tid e an) means daily, recurring every day. I can think of some quotidian tasks (such as making beds or washing dishes) that are not very exciting and others that are (researching new words).
