Well, then I'm a big nut! It was a favorite saying of Jack LaLanne, and way back in the 80s, I had the privilege of working with him and picked up a lot of good advice from the man himself. Mr. LaLanne was extremely knowledgeable and always proved his physical strength. Once, sitting next to me at a grand opening in Upland, he said, "Jean, eat five raw almonds a day! They give you ribonucleic acid, which works with your body to give you perfect cells." What? As a young mother, I wanted to absorb everything he said. One of the first books Mr. LaLanne read (at 15 years of age) that changed his lifestyle was Sugar Blues. After hearing this, I would let my three young daughters choose any breakfast cereal they wanted, as long as sugar was not the first ingredient. They would come back with good ol' oatmeal. We would have it with berries that made it special to them. Another pet peeve for Jack LaLanne was processed foods. "If it doesn't come from a tree or the earth, don't eat it!" Wait, what about potato chips? "Sure," he'd say, "it doesn't matter what you have ONCE in a while, it matters what you have EVERY day." Ohhh. He said the perfect meal was a smaller than palm-sized portion of protein, a large serving of vegetables and a big salad. Once, about 10 of us went to his former home in Toluca Lake and gathered around a large kitchen island. We each chopped two different raw veggies and threw them into a massive bowl in the center. That was lunch! And it was GOOD. Nowadays, my favorite salad is Pioneer Woman's Ultimate Asian Chicken Chopped Salad. Delicious! Meeting Jack LaLanne has had a real impact on my life. For the last 40 years I have been drawn to healthful eating and have passed that on to my children. I'll share my most favorite salmon recipe from my oldest daughter: MISO GLAZED SALMON Dissolve 2 tablespoon Miso (soybean paste) with 2 tablespoons hot water. Add 2 tablespoons brown sugar and 2 tablespoons Tamari soy sauce (gluten free!). Place 4 (6-ounce) salmon filets (about one inch thick) in a shallow baking pan. Spoon the mixture over, bake approximately 10 minutes and broil for a minute or two to give a golden brown top. Enjoy! Here's to your health! Jean and her husband, Dave, are new (April) to The Colony. Her job for the Jack LaLanne Corporation involved print and TV work.
