SOLERA DIAMOND VALLEY | SEPTEMBER 2021 9 Procrastination Guacamole 2 ripe avocados 1 to 2 garlic cloves, finely minced 1/2 jalapeno pepper, seeds and membrane removed, finely minced 1/8 red onion, finely minced Juice of one lime Small handful cilantro, finely minced Coarsely mash avocado, garlic and jalapeno with wooden spoon until avocados are creamy but chunky. Add onion and salt to taste, and stir together. Sprinkle with lime juice and cilantro, stir and taste again. Consider adding extra jalapeno, onion and lime juice. Some people like to add chopped tomatoes. I don't. Because it's all made to your taste, everybody's guacamole is different. To each her own. Instead, here's an easy recipe for guacamole: By Theresa Rossetti, Resident Flatbreads are quite the craze lately for good reason. They're quick to make and bake, the dough is easily found in markets, and fairly easy to make at home if you care to. You can substitute dairy-free, gluten-free, etc. for many of the ingredients. Here's one I tried recently and was pretty well received: Experimenting On Unsuspecting Friends Part Seven: Ingredients: ½ cup part-skim ricotta cheese 1 Tbsp. grated Pecorino Romano cheese 2 Tbsp. olive oil 2 tsp. grated lemon rind 1 Tbsp. fresh lemon juice ¼ tsp. kosher salt 1 (10.5 oz or so) pizza crust 1 Tbsp. chopped fresh chives ¼ tsp. freshly ground black pepper Instructions: You can use a cast iron pan (which I don't own) or just a baking sheet. Place in oven and preheat to 400 degrees. Combine the cheeses, lemon rind and juice, olive oil and salt in a bowl, spread the mix over the crust, leaving an ½ inch border. Place the crust on the pre-heated pan and bake for 12 minutes or until crust is crisp. Put on a cutting board, sprinkle with the chives and pepper, cut into serving pieces. Serve warm or at room temp. Another CAC member mentioned that a flatbread or a pizza can be baked on a barbecue grill or in a smoker to change the flavor profile. Lemon Ricotta Herbed Flatbread
