Happy Campers RV Club
Happy Campers is open to all residents
and their guests. We meet the first
Saturday of each month in the card room
of The Lodge at 10 am. We are a friendly
group that loves to travel and camp
together.
September was our annual trip to
Pismo Beach, and I will have stories and
pictures in next month's article.
We are currently in the planning stages
for 2022 trips. This is the perfect time to
join us. Suggested places include Lake
Havasu AZ or Emerald Cove in Parker CA,
Sedona, and Anza-Borrego State Park. We
will also return to Pismo Beach again next
year. So, bring your ideas and friendly
smiles to our next meeting Nov. 6.

Cherry Gelatin Supreme
From the kitchen of Cecilia Black
2 cups water divided, 1 package (3
ounces) Cherry Jell-O, 1 can (21 ounce)
Cherry Pie filling, 1 package (3 ounce)
Lemon Jell-O, 3 ounces Cream Cheese
softened, 1/3 cup Mayo, 1 - 8 ounce can
crushed pineapple undrained, 1 cup mini
Marshmallows, ½ cup heavy whipping
cream whipped, tablespoon chopped
pecans.
In a large saucepan, bring 1 cup water
to boil. Stir in Cherry Gelatin until
dissolved. Stir in pie filling. Pour into
11" x 7" dish, cover and chill 2 hours or
until set. In a small saucepan bring 1 cup
water to boil. Stir in Lemon Gelatin until
dissolved. Separately in another small
bowl beat the cream cheese and mayo
until smooth. Beat in Lemon Jell-O and
Pineapple, cover and chill for 45 minutes.
Then fold in the marshmallows and
whipped cream and spoon over cherry
layer, sprinkle with pecans, cover and
chill for two hours or until set.
