Ingredients: • 1 to 2 Tablespoons butter, for greasing the casserole dish • 6 large croissants, cut into 1-inch cubes • 3 cups fresh mixed berries, (I used blackberries, raspberries and blueberries) • 12 ounces cream cheese, softened • 1-1/2 cups milk or half and half • 3/4 cup granulated sugar, may need a bit more if berries are tart • 3 large eggs • 1-1/2 teaspoons vanilla extract • 1-1/2 teaspoons lemon zest, yellow part only (about 1 lemon) Glaze • 3/4 cup powdered sugar • 3 to 5 Tablespoons milk or half and half • 1-1/2 teaspoons vanilla extract • Whipped cream, optional Directions: Lightly grease a 3-quart, (9 x 13 inch) casserole dish with butter. Toss together the cubed croissants and berries. Evenly distribute the mixture in the buttered dish. Set aside. Place softened cream cheese in a large mixing bowl. Beat with a hand mixer until smooth. Gradually add the milk or half and half, sugar, eggs, vanilla and lemon zest, beating until well combined. Carefully pour the cream cheese mixture into the casserole dish. Press down the croissants with a fork to ensure they are all moist. Cover with aluminum foil and refrigerate at least 6 hours up to overnight. Remove the dish from the refrigerator at least 30 minutes prior to baking. Preheat oven to 350 degrees. Bake the casserole, covered with the aluminum foil, for 30 minutes. Remove the foil and bake uncovered for 15 minutes, until the custard is set (when a knife inserted in the center comes out clean) and the top is golden brown. While the casserole is baking, make the glaze. Whisk together the powdered sugar, 3 Tablespoons of the milk or half and half and vanilla in a medium bowl until smooth, adding more milk or half and half, a teaspoon at a time until the glaze is smooth and pourable. Set aside. Evenly drizzle the glaze over the casserole when it is finished baking and hot out of the oven. Serve warm or at room temperature topped with whipped cream, if desired. It is made from buttery croissants, fresh fruit, and a cream cheese custard that is baked to golden perfection. It's enough to serve a crowd, but don't worry, if there are any leftovers, they will keep in the refrigerator for several days. Serves 8 to 10. Active time: 10 minutes; Bake time: 45 minutes; Chilling time: 6 hours to overnight.
