Happy Campers RV Club
Four Seasons Happy Campers would like to invite all residents who
share a love of adventure, community and camping to join us for our
meetings on the first Saturday of every month. We meet at The Lodge
in the Card Room at 10 am. Don't own a RV? Don't let that hold you
back from all the fun! There are all sizes and shapes you can rent!
September was our annual trip to Pismo Beach and as promised
here are a few pictures. Russ gave a moving tribute to all those lost
on 911. Beautiful music, words of thought and even a special fly over
right over our campsite!
The weather was perfect highs 70s lows 50s no rain, campers
enjoyed the beach, the Car Show, corn hole, golf, campfires, wine
tasting and lots of great food.

Easy Foil Cheesy Potatoes
Campfire Recipe Found on Delish
2 lb mini gold potatoes quartered, 2 tsp extra virgin olive
oil, 1 tsp garlic powder,1 tsp dried oregano, Kosher salt,
ground black pepper, 2 cups shredded mozzarella, 1 cup
fresh grated Parmesan, chopped parsley and crushed red
pepper flakes for garnish.
Preheat grill to medium-high; cut four large pieces of
foil about 10"long. In large bowl, toss potatoes with olive
oil, garlic powder, and oregano and season with salt and
pepper. Divide potatoes between the foil pieces, then fold
the foil packets cross wise to completely cover the potatoes.
Roll top and bottom edges to completely seal. Place foil
packets on the grill and cook 10-15 minutes. Open packets,
sprinkle with cheese, close and cook another few minutes
until cheese is melted, then open and add garnish. Yum!
