FOUR SEASONS BREEZE | DECEMBER 2021 13 By Irene Welker A pie-baking contest sponsored by the Kopper Kettle Bistro and held in The Lodge Lobby in November was a delicious success! Twelve pies were submitted for judging and the judges (and a few observers) were happily stuffed at the end. Every conceivable type of pie was submitted; fruit, cream, nut, caramel, custard and cheesecake. Wait, what? Yes, cheesecake is classified as a pie. Stacy Dean, owner of the Kopper Kettle Bistro, thoroughly enjoys speaking with residents about and sharing recipes. She genuinely wanted to try many of the recipes described by Bistro patrons so she decided to sponsor the pie-baking contest. Recipes for the winning entries will be provided to the Bistro and each entry will be featured for a week on the Kopper Kettle menu during the month of December. A month of pies, oh my! First prize, a $100 Kopper Kettle gift certificate, was awarded to Tanya Stewart for her luscious and unusual Pumpkin Cheesecake with Pecan Pie filling. Tanya is an occasional baker, but when inspiration strikes, she works on a recipe until it meets the approval of friends and relatives. Her inspiration for the cheesecake came from her daughter who was raving about a similar dessert she had had at a restaurant. Through trial and error, Tanya recreated her version of the restaurant's dish. Second prize, a $50 Kopper Kettle gift certificate, was awarded to Wayne Disher for his scrumptious Peanut Butter Crème pie. His inspiration for this yummy dessert was his mother's recipe which has been a family favorite for over 50 years. Wayne's family presses him to make this dish for family gatherings. Third prize, a $25 Kopper Kettle gift certificate was awarded to Elaine Recchion for her exquisite Raspberry Cream Crumble. Elaine loves to bake and delights in being creative in the kitchen. Her inspiration for this pie was a get together when she needed to make a last-minute dessert and she wanted something different. She succeeded! Honorable mention went to Mary Moody- Cox for her distinctive Lilikoi meringue pie. Lilikoi is grown in Hawaii and is similar to passion fruit. Mary's inspiration for this dish came when she lived in Hawaii and had the Lilikoi growing in her garden. She adapted her favorite lemon meringue pie recipe in order to utilize the delightful fruit. This pie was a Kopper Kettle staff favorite.
