This month will be all about celebrating Earth Day, gardens, and cooking garden vegetables. We will have some informative speakers on home gardening, and how to incorporate this into your daily cooking. Congratulations to the winners of the soup cook off: Linda Viera, winner for the Chicken Soup; Janna Waller, winner for the Vegetable Soup; and Pat Coie, winner for the Clam Chowder. Competition is always fun. As most of you know, April 22 is Earth Day, which is when people all over the world demonstrate both their love for our planet and their support for protecting the environment. Another great way to celebrate Earth Day is by being mindful of the foods we eat. Here are a few foods that are called Earth foods and will help you in re- envisioning your main course: black beans, kale, lentils, quinoa, spinach, and sweet potatoes. And how about eating avocado on toast on Earth Day? All you need is half a ripe avocado, one teaspoon of lemon juice, a toasted slice of multigrain bread, a pinch of sea salt, and some butter. Yummy! How about making a run to the local farmers market, for another way to celebrate by buying seasonal produce, seasonal fruits and vegetables that don't require much assistance from humans.
