Mix mayonnaise, curry powder and pepper, stir into chicken mixture. Refrigerate until serving. 2. To serve, stir in pecans. Spoon into lettuce- lined rolls. I love croissants and found some good ones in the Ralphs bakery section. I used the mini size. Instructions: 1. Preheat oven to 425 degrees. Season the cubed squash with cinnamon and salt. Roast for 30 minutes. 2. While the squash is roasting, sauté the apple and onion in oil over medium heat in the soup pot. Season with a few dashes of salt, cooking for about 10 minutes, or until soft. 3. Add the squash, then pour in the broth and milk, bringing it to a boil. 4. Reduce heat, simmering uncovered for 20 minutes. Add salt if needed. 5. Use a food processor, blending until soup is smooth and creamy. Instructions: 1. In a cup, add the gelatin and water and heat in microwave for 10-15 seconds until dissolved. Give it a stir and set aside. 2. Puree the washed strawberries, place in a mixing bowl and add the dissolved gelatin. Give it a good stir. Taste the strawberry mixture and add powdered sugar to taste, depending on the sweetness of berries. 3. Whip the cream until semi-stiff. Do not over whip, as it will be too stiff. Then add to the strawberry mix and gently combine so you don't knock out the air. 4. Transfer mousse into serving bowls and cover with plastic wrap. I used my parfait glasses. Refrigerate for about 4 hours. Top with whipped cream. Yummy!
