Add salt and sugar, stirring occasionally. Cook until rice is done, about ½ hour. Check for doneness. Cool. 2. Separate eggs and beat whites until they stand in peaks. Add slightly beaten egg yolks to rice mixture and blend well. Fold in egg whites gently and add raisins. 3. Pour into well-buttered 8" x 8" glass pan. Bake at 325 degrees for ½ hour or until a knife comes out clean when inserted. 4. Serve hot with sour cream or hot butter melted in cream. Honey is a good topper. Cut into 6 servings. 5. Recipe can be doubled. Place into 9" x 13" buttered glass baking dish. Bake for 1 hour at 350 degrees, or until golden brown. To reheat, place Drachona in a little milk or cream. YUMMY! Instructions: 1. Preheat oven to 375. Grease 8" or 9" round layer cake pan. 2. In medium bowl, combine flour, baking powder, baking soda, salt, and 3 tbsp sugar. 3. Add shortening and cut into flour with a pastry blender until shortening is in fine pieces. 4. Make a hole in the flour mixture and pour in buttermilk and raisins. Mix. 5. Turn onto lightly floured board and knead a few times. Shape into a round loaf and put into pan. 6. With a sharp knife cut a cross on the loaf about ½" deep. Brush top with melted butter and sprinkle with 1 tbsp sugar and cinnamon. 7. Bake 35-45 minutes until brown or bread thumps when you rap it with your knuckles. Drachona - An Old-World Recipe Irish Soda Bread • 1 quart whole milk • ¾ cup rice • ¼ tsp salt • ½ cup raisins • ½ tsp sugar or more • ¼ cube butter • 3 eggs Ingredients: Ingredients: The following recipe is from Dee March. It came from her grandmother and sounds really interesting. She makes it for breakfast, served hot, or it also keeps for several days. Cooking suggestion: I published a Strawberry Dessert recipe in August 2021, which was strawberry shortcake served in an easier way. If you saved the recipe, here's a suggestion for making it for any upcoming patriotic holiday, such as Memorial Day, Independence Day or Labor Day. After making, frost it with whipped cream, put blueberries in the top left like stars, then sliced strawberries in stripes like on a flag.
