Summer has arrived and the temperature is rising. Here is a cool, refreshing, and filling dish that is full of healthy, fresh ingredients. Bonus — it's easy to make and tastes oh so yummy! If there are ingredients you don't like, omit them and substitute something else. For instance, chopped jicama can replace celery. Don't like heat? Omit the jalapeno. If you want some heat, add more hot sauce. Too sweet? Cut the ketchup and add more Clamato. Try tossing in chopped mango! Total time: 1 hour 45 min; Prep time: 45 min; Chill time at least 1 hour.
