Summer has arrived and the temperature is rising. Here is a cool, refreshing, and filling dish that is full of healthy, fresh ingredients. Bonus — it's easy to make and tastes oh so yummy! If there are ingredients you don't like, omit them and substitute something else. For instance, chopped jicama can replace celery. Don't like heat? Omit the jalapeno. If you want some heat, add more hot sauce. Too sweet? Cut the ketchup and add more Clamato. Try tossing in chopped mango! Total time: 1 hour 45 min; Prep time: 45 min; Chill time at least 1 hour. Serves 6. 18 FOUR SEASONS BREEZE | JUNE 2022 Ingredients: • 1/2 cup chopped red onion • Juice of 3 limes, about 1/3 cup • 1-1/2 pounds chilled medium shrimp that has been cooked, peeled, deveined with tails removed • 3 plum tomatoes, chopped • 1 cucumber, peeled, seeded and chopped (see note below) • 1 stalk celery, diced • 1 jalapeño pepper, seeded and diced (optional) • 1/4 teaspoon cumin • Salt and black pepper to taste • 2 1/2 cups Clamato juice • 1 cup ketchup • 1/4 to 1/3 cup chopped fresh cilantro, (leaves only-discard stems) • 3-4 drops of hot pepper sauce • 2-3 avocados, peeled, pitted and cubed (about 8 ounces) • Additional limes cut into wedges for serving Mexican Style Shrimp & Avocado Cocktail Directions: 1. Mix onion and lime juice in a small bowl, set aside. 2. Mix shrimp, tomatoes, cucumber, celery, jalapeno, cumin, salt, and pepper in a large bowl. Toss gently until the ingredients are thoroughly combined. Set aside. 3. In a third bowl, whisk the Clamato juice, ketchup, cilantro, and hot pepper sauce. 4. Add the onion mixture and the Clamato mixture to the bowl containing the shrimp. Toss together. Gently stir in the avocados. Chill for at least and hour. Taste and add any additional salt, pepper, or hot sauce to taste. 5. Serve with lime wedges. Notes: Frozen cooked shrimp of any size may be used. Defrost overnight in the refrigerator, then dry with paper towels. An easy way to seed a cucumber is to cut it in half lengthwise and scoop the center out with a spoon.
