18 | THE COLONY NEWS | SEPTEMBER 2022 | What's Cookin'? By Joyce Hansen Instructions: 1. Preheat oven to 350 degrees. Grease and flour a 9" x 13" pan. 2. Pour boiling water over oats in a bowl. Allow to sit 20 minutes. 3. In a large mixing bowl, beat butter with granulated and brown sugar until light and fluffy. Add soaked oats, buttermilk and mashed banana. Blend well. Add eggs and vanilla, beat to incorporate. 4. In another bowl, sift flour with baking soda, salt, nutmeg and cinnamon. Add to batter and stir just until dry ingredients are no longer visible. Stir in apples. 5. Spread batter into prepared pan. Bake for 35-40 minutes, until toothpick comes out clean. Cool completely, then frost with Cinnamon Cream Cheese Frosting. Instructions: 1. Rinse and dry the meat. Place a small amount of oil on bottom of medium pot. Add the meat. 2. Slice onion and place over the meat. Add green pepper, celery, carrots and potatoes on top of the meat and add salt. Add 2 cups of water, pour tomato sauce over contents of pot. Sprinkle parsley on top. 3. Bring the pot of stew to a boil, then cover. Lower flame and simmer for 2 hours, stirring after about an hour. The veggies get mixed in with the meat, and potatoes thicken the stew. Serve with bread and butter. A great meal when the weather cools down, but it's good anytime! Apple & Banana Oatmeal Cake Beef Stew • 1 cup quick cooking rolled oats • 1 tsp vanilla • 1 cup boiling water • 1 ½ cups flour • ½ cup/1 stick butter • 1 ¼ tsp baking soda • 1 cup granulated sugar • ½ tsp salt • 1 cup brown sugar • ½ tsp nutmeg • 2 eggs, beaten • 1 tsp cinnamon • 1 ½ cups diced, peeled apples • 1 banana, mashed • ½ cup buttermilk, yogurt or sour cream Ingredients: Ingredients: This one's for you, Walt Bowman! I had a request from our esteemed Board President to publish a recipe with no broccoli or cauliflower. This one should qualify, and it's another of Marian Cobb's. It sounds like one my husband would enjoy as well. Marian tells me it comes from her mother, when she was newly married and just learning to cook. She got the recipe on the phone, but her mother forgot to tell her to add water, so it burned. I'm sure Marian's cooking skills have improved greatly since then, as she is a regular contributor to this column. She prepares three meals a day, which not many of us do. Your Colony friends and neighbors are enjoying them. • Pkg. beef stew meat, about 1 ½ lbs • Celery ribs, chopped, to taste • 1 medium onion • Peeled and cubed potatoes, to taste • ½ green bell pepper, chopped • Small can tomato sauce • Several carrots, peeled and sliced • Dried parsley Instructions: 1. In bowl, beat cream cheese with butter until smooth and creamy. 2. Add milk, vanilla, cinnamon and powdered sugar. Beat until smooth and spreadable. Frost cake and sprinkle chopped nuts on top, if desired. Cinnamon Cream Cheese Frosting Ingredients: • 4 oz cream cheese, room temp. • 1 tbsp whole milk • 6 tbsp/ ¾ stick butter, room temp. • 1 tsp vanilla • 3 cups powdered sugar • ½ tsp cinnamon Great cook, Patti Christensen, shared this recipe at Tuesday Social.
