18 FOUR SEASONS BREEZE | SEPTEMBER 2022 • 4 Chicken and Apple Sausages, 12- 16 oz • Smoked Turkey Sausage, 12-16 oz • 1 Polish Kielbasa, 12-16 oz • 4 Andouille Sausages 12- 16 oz • 1 pound mini-bell peppers • 3 medium brown onions, peeled and sliced crosswise into 1/4-inch disks • 3 medium zucchinis, about a pound, sliced into 1-inch slices • Extra virgin olive oil • Sea salt and freshly ground pepper to taste • 1-1/2 teaspoons Italian seasoning • Optional condiments: several types of mustard, cream style horseradish, ketchup or BBQ sauce 1. To cook on a grill: Preheat grill to medium high heat. If the grill bars are widely spaced, use a grill basket for the vegetables. 2. To cook on a stove top: Preheat cast iron or other heavy-bottom pan or griddle plate to medium high heat. Note: if using stove top, you may have to cook in batches. 3. Lightly grease grill, griddle, grill basket and/or pan. 4. Brush the vegetables with olive oil and sprinkle with the Italian seasoning, salt, and pepper. Working in batches, place each of the vegetables on one side of the preheated grill or pan. Cook until tender and lightly charred all over, about 10-12 minutes for the bell peppers, 8-10 minutes for the zucchini, and 10-12 minutes for the onions. 5. Place all the meat on the other side of the grill, or if using the stove top, use a second lightly greased preheated pan or cook after the vegetables. Follow package instructions for cooking times for each type of sausage. Most smoked or precooked sausages will only need to be heated through and cooked until nicely charred with grill marks. The key to getting great grill marks on the vegetables and meat is not to move them around too much once they are placed on the grill. Before turning the meat or vegetables, lift slightly to check for grill marks, if nicely charred, turn over to grill the other sides. 6. Arrange the food on a serving platter and/or a large cutting board. Serve with your choice of condiments. Here is a great mixed grill dish consisting of sausages, fresh vegetables and herbs that is bursting with color and flavor. The beauty of this recipe is it can be cut down or increased to serve any number of guests. You can also freely substitute ingredients. Do you prefer Italian sausage, Bratwurst, Linguica or even plant-based? No problem, use what you like. The same goes for the vegetables. Substitute seeded and sliced red, green and/or yellow bell peppers for the mini-bells; use mushrooms, yellow squash, radicchio, eggplant, whatever you prefer. It's your dish, make it your way.
