Add shredded tamales and chopped vegetables and continue cooking. 3. Place in a 9" x 13" casserole. Top with cheese. 4. Bake at 350 degrees for ½ hour. Cover with foil when cool. Tamale Casserole • 3 XLNT large tamales (or 6 small) • 1 lb hamburger • ¼ chopped onion • ½ chopped bell pepper • 2 diced tomatoes • 1 small can chopped black olives • Shredded cheddar cheese Ingredients: Remember, I'm always searching for new recipes. Beat eggs, add cottage cheese, green chiles, salt and pepper. Pour over shredded cheese in pan. Bake for 45-50 minutes, until browned and set. Serve with chile salsa. Feel free to make your own variations. My neighbor added mushrooms and diced ham to hers and it was great. Crustless Quiche Ingredients: I am reprinting this favorite recipe of mine from two years ago since it is a great accompaniment to those delicious muffins. • 12-15 eggs, depending on size • ½ lb shredded cheddar cheese • ½ lb shredded jack cheese • 1 pt low-fat cottage cheese • salt and pepper • 4 oz can diced green chiles Instructions: 1. Preheat oven to 400 degrees. Grease and flour 8 muffin cups or use liners. 2. Whisk flour, sugar, baking powder and salt together in a large bowl. 3. Pour oil into a small liquid measuring cup. Add egg and enough milk to reach the 1-cup mark. Stir until combined. Pour into flour mixture and mix just until batter is combined. Fold in blueberries. Set batter aside. 4. Combine sugar, flour, butter and cinnamon for crumb topping in a small bowl. Mix with a fork until crumbly. 5. Spoon batter into prepared muffin cups, filling right to the top. Sprinkle with crumb topping. Add 1 tbsp water to the empty cups to help keep muffins from burning. Bake for 20-25 minutes, until toothpick comes out clean. "To Die For" Blueberry Muffins Muffin Ingredients: Crumb Topping: • 1 ½ cups all-purpose flour • ¾ cup white sugar • 2 tsp baking powder • ½ tsp salt • 1/3 cup vegetable oil • 1 egg • ½ cup milk, or more as needed • 1 cup fresh blueberries • ½ cup white sugar • 1/3 cup all-purpose flour • ¼ cup butter, cubed • 1 ½ tsp ground cinnamon I've had this recipe from Marian Cobb for a while. I hadn't used it because I didn't understand what XLNT tamales were. They are a brand of ready- made tamales you find in the refrigerator section. At Ralphs, they are around the cheeses and hot dogs. They only had beef, but if you find another kind, I would use them. It's easy to make, and a good dish to take to a potluck. Patti Christensen shared these muffins with us, and the name is fitting. They are extra large and yummy with the crumb topping; a whole different category from a box mix.
