Cake Layer
• 1 box (15.25 oz.) yellow or
white cake mix
• 1/2 cup butter, melted, but not
hot
• 2 large eggs
Cream Cheese Layer
• 3 1/2 cups powdered sugar
• 8 ounces cream cheese, room
temperature
• 2 large eggs
• 1 teaspoon vanilla extract
1. Preheat oven to 350 degrees. Grease a 9x13 cake pan.
2. Combine the cake mix, butter and 2 eggs in a large bowl. Mix
with a spoon or low speed of a mixer until well blended. The
batter will be stiff. Spread batter in an even layer in the prepared
cake pan.
3. In a second bowl, combine the powdered sugar, cream cheese,
2 eggs, and vanilla. Mix well using a spoon or the low speed of
a blender. Pour over the top of the cake layer, spreading to the
edges of the pan.
4. Bake in the preheated oven for 35-40 minutes, until the top is set
and golden brown and is starting to pull away from the edges of
the pan. Cool completely in the pan.
Nieman Marcus Cake
While this is not the official recipe for the ooey gooey butter cake
with cream cheese topping that was served at the Nieman Marcus
cafes, it comes close in taste. Plus, it is easy and quick to make. If
you need a splashy, delicious dessert to serve at brunch or dinner
for a crowd, this is your ace in the hole. Total time less than 60
minutes, plus cooling; makes one 9x13 cake; serves 12-14.
