10 FOUR SEASONS BREEZE | DECEMBER 2022 Courtney Taylor, our Publisher/Editor of the Breeze, has provided us an excellent magazine, at no cost to our HOA, for the past 10 years. After graduating from the University of Arizona, Courtney worked as a graphic artist and at 24, started Image Up Advertising & Design. Her boundless energy and creativity also led her to performing at different venues as a stand-up comedian, writing a weekly humor column for the Orange County Register's Saddleback Valley News, and hosting a cable TV show in Mission Viejo. Balancing work with finding time to dote on her grandsons, and traveling with family and friends is an achievement. Her support for the annual A Night of Comedy to benefit Carol's Kitchen reflects her appreciation for the Arts and giving back to the community. Her close working relationships with the Communications Board resulted in discovering new interests like raising monarch butterflies and baking. In addition to the Breeze, Courtney, with the help of her Account Executive Stacey Parr, who manages advertising and assists with design, publish six other magazines for active-adult communities, keeping them very busy. The next time you open up your copy of the Breeze, enjoy the contributions from our residents, HOA Board of Directors, FirstService team, and Courtney's passion to deliver an excellent magazine. By Irene Welker Many, if not all, Four Seasons residents are aware that Stacy Dean is no longer running the Kopper Kettle Bistro. In typical Stacy fashion, she made sure to leave the community, and her staff, in good hands by recommending her successor, Mike Miller. Mike was actually in competition with Stacy three years ago when they both submitted the requested paperwork to operate the Bistro after Smitty left. I sat down with Mike shortly after he took over management of the Bistro. Quite frankly, I wanted to know more about this man who came so highly recommended by Stacy. He did not disappoint. Mike has more than 50 years of culinary experience and it all started at age 15 with his first job at a McDonald's. He then moved on to full-service restaurants where he learned the restaurant trade from the ground up, starting as a dishwasher at Cask and Cleaver. He worked his way up through the ranks in various jobs and at a number of restaurants from Black Angus to mom-and-pop establishments. Each step brought Mike closer to his goal of owning his own restaurant. Mike's dream of being a restaurateur came true in 1992 when he purchased a diner, Hudson's Grill. He then opened America's Sports Grill, a combination sports grill, restaurant, and nightclub. Mike sold both eateries and opened his current baby, Woody's Classic Grill which he still owns along with a second venue called Pizza Q. During the pandemic, Mike worked with government agencies to help feed the homeless who were housed via the Project Room Key program and with the Great Plates Program to deliver food to low-income seniors. Between the two programs, his restaurant fed thousands who otherwise would have been food insecure. The Bistro Four Seasons makes three venues which he is currently operating. He stated that this should give him an advantage in staffing and training of personnel as he will be able to utilize the staff already at the Bistro as well as pull staff from his other sites to supplement and help train new staff. Mike is in the process of staffing up and when fully staffed, he plans on being open from 8 am to 7 pm seven days a week. He emphasized that the Bistro will continue to make home deliveries and hold special events. Additionally, he is evaluating the current menu, portion sizes, and pricing. Mike is determined to provide all customers value and good service. He is working on a new menu but wants to retain current favorites. Mike is also open to suggestions for the new menu. Mike said that he is in the restaurant business for all the right reasons. He firmly believes that the employees are the number one priority because if the employees are happy, they take good care of the guests. He wants both the employee's and guest's experience at his restaurants to exceed their expectations. He further stated that he wants to create a culture of family with employees, guests, and the community. The heart of the culture will be putting love into everything they do. There is a new name, The Bistro Four Seasons, and a revised menu. A grand reopening is scheduled for January. So come on down and check out the new proprietor, menu, and vibe!
