The Happy Cookers meeting is held in the South Clubhouse on the fourth Friday of the month. This month's meeting is March 24 from 11 am to 12 pm. This month's program theme will be The Luck of the Irish. Members will be bringing traditional Irish dishes and are asked to dress in green. This month celebrates Women's History and St. Patrick's Day. If you're a fan of St. Patrick's Day, I am sure you look forward to cooking for March 17. It's so fun to participate in the American version of the holiday by starting your meal with green appetizers or treating yourself to a festive St. Patrick's day dessert. The best part of this day is digging into a plate piled high with dishes that celebrate Irish cuisine. For some of us that means classics like corned beef and cabbage or Shepherd's Pie. For others it's all about sticking to the traditional and making colcannon (a potato dish) or boxty (potato pancakes). Irish cuisine may not be dessert-heavy, but there are a few things it does really, really well — like the Spiced Irish Apple Cake. Here's my favorite dessert recipe. Use a 9-inch spring form pan to make the cake. SPICED IRISH APPLE CAKE Cake: • ½ C unsalted butter at room temperature • ½ C granulated sugar • 2 large eggs • 3 Tbsp whole milk or cream • 1 ¼ C all-purpose flour • 1 tsp baking powder • 1 tsp cinnamon • 1/8 tsp salt • 3 Granny Smith apples peeled and thinly slice (about a lb. after slicing) • Confectioners' sugar for dusting Streusel Topping: • ¾ C flour • ¼ C Old Fashioned rolled oats • 6 Tbsp cold butter cut in small pieces • ½ C sugar Custard Sauce: • 6 large egg yolks • 6 Tbsp sugar • 1 ½ C whole milk or cream • 1 ½ Tsp vanilla Directions: • Heat oven to 350° • Grease the spring form pan • Make the custard sauce ahead of time - bring the milk to simmer over a medium heat • Whisk the yolks and sugar • Drizzle a little hot milk into the egg mixture, whisking all the time, then drizzle a little more milk into it and transfer it back into the pan of hot milk • Continue cooking, stirring constantly, until the mixture coats the back of the spoon/spatula. It will continue to thicken as it cools. Stir in the vanilla. • Put the custard through a sieve to remove lumps. Refrigerate until completely cooled. • Put the strudel on the top of the cake before putting it in the oven. Bake the cake for 50 minutes in a 350° oven. • Dust with confectioners' sugar, and serve with the custard over it… Bon Appetit. So, if you love to cook, or just love to eat, this is the club for you!
