The Happy Cookers meets on the fourth Friday of every month at 11 am in the South Clubhouse. This month's meeting will be June 23 and the guest speaker is Ron Duncan, the local Bee Keeper, who will be speaking to us about bees and cooking with honey. Ron, who has over 600 hives, shares with us a tip that if you suffer from allergies (and who doesn't?), eating 'local' honey will help them. He will be selling his jars of honey, which would make a great Father's Day gift. Speaking of Father's Day, the nation's first Father's Day was celebrated on June 19, 1910, in the state of Washington. However, it was not until 1972 — 58 years after President Woodrow Wilson made Mother's Day official — that the day honoring fathers became a nationwide holiday in the United States. This is a great dessert for any father with a sweet tooth Ingredients: • 1 C salted butter (2 sticks) • 1 C packed brown sugar • ½ C granulated sugar • 2 large eggs • 2 Tsp vanilla extract • 2 C all purpose flour • 1 Tsp baking soda • ½ Tsp ground cinnamon • 1 ½ C old fashioned rolled oats • 1 C chopped pecans • 1 C coconut flakes • 2 C chocolate chips • flaky salt for sprinkling Directions: 1. Brown 1 stick of butter by melting it in a medium saucepan over medium heat, let it cook and bubble for 3 to 5 minutes or until the foam and butter underneath is golden brown. 2. Immediately transfer it to a large, heatproof mixing bowl. Let cool to room temperature, about 30 minutes. 3. Meanwhile, allow the remaining stick of butter to soften. Preheat the oven to 350 degrees. 4. Add the softened stick of butter, brown sugar, and granulated sugar to the mixing bowl with browned butter. 5. Beat until lightened in color and texture, 2 to 3 minutes. 6. Add the eggs and vanilla, beat until smooth. 7. Combine the flour, baking soda, and cinnamon in a bowl. Add it to the butter mixture in three increments, mix until incorporated. 8. Add the oats, pecans, coconut flakes and chocolate chips. 9. Bake for 12 to 14 minutes, or until golden brown.
