32 FOUR SEASONS BREEZE | JULY 2023 • 16 ounces small elbow macaroni • 12 to 14 ounces canned tuna in water, drained • 3 hardboiled eggs, chopped • 3/4 cup red onion, finely diced • 2 stalks celery, finely diced • 1 cup mayonnaise • 1 cup sour cream • 1 Tablespoon yellow mustard • 2 teaspoons salt free seasoning • 2 Tablespoons dried dill weed • Salt and black pepper to taste • 3 Tablespoons sugar, optional (use if you like a sweeter taste) Joni's Tuna Pasta Salad My sister, Joni, makes one of the best tuna pasta salads I've ever had. This dish is easy to make and will serve a crowd. Elbow macaroni, any size, is traditional, but you may use any small pasta such as bowtie, penne, ziti, etc. You can also switch up the salad dressing; a nice bottle of creamy Italian or a coleslaw dressing also works well. I did not have sour cream on hand so after draining the pasta I put it in a bowl and added 1/3 cup apple cider vinegar to the hot pasta, which I let sit for about 20 minutes to absorb the flavor. I then substituted 1/2 cup milk for the sour cream. Serves 10-12; prep time 5 minutes; cook time 15 minutes; chill time 1 hour; total time 1 hour, 20 minutes. INGREDIENTS DIRECTIONS • Cook pasta in a large pot of salted boiling water for 10-15 minutes, according to package directions. Drain cooked pasta and set aside to cool. • Place drained tuna in a large bowl and break into small pieces. Mix in eggs, onion, and celery. Set aside. For dressing: • Place the mayonnaise, sour cream, mustard, salt-free seasoning, and dill in a medium bowl. Mix well. Add salt, pepper and sugar, if using. Mix until well combined. • Add cooled pasta to the large bowl with the egg/tuna mixture. Pour dressing over contents. Stir to coat all ingredients evenly. Cover and refrigerate for at least an hour. Serve NOTE: If the salad will be refrigerated longer than an hour it may dry a bit because the pasta will absorb the dressing, therefore, if you plan on keeping it refrigerated for longer than an hour, reserve some of the dressing and add it to the pasta prior to serving.
