18 | THE COLONY NEWS | AUGUST 2023 | What's Cookin'? By Joyce Hansen Instructions: 1. Melt butter over medium heat in a skillet. Saute mushrooms and onions until tender, about 5 minutes. Remove from skillet and set aside. 2. Spread mayonnaise on 4 slices of bread. Turn the slices mayo-side down, and evenly spread hummus on all 4 slices. On only 2 of those slices, evenly layer mushroom-onion mixture followed by Swiss cheese. Top with the remaining 2 bread slices, mayo-side up. (Each sandwich will have hummus on top and bottom of sandwich, with cheese and mushroom mixture in the center.) 3. Reheat skillet over medium heat. Place sandwiches mayo side down in skillet and cook until golden brown on both sides and cheese is melted (5-6 minutes), flipping halfway through. Ingredients: • 1 tbsp unsalted butter • ½ c sliced fresh mushrooms • ½ c coarsely chopped sweet onion • 4 slices bread (great on sourdough or rye) • 4 tsp mayonnaise • 2/3 c roasted red pepper hummus • ½ c shredded Swiss cheese From "Patti's Test Kitchen" comes a great meatless sandwich. Instructions: 1. Beat sauce ingredients together with wire whisk until smooth. 2. Combine with the fruit and chill. 3. Garnish with fruit and chill until ready to serve. Instructions: 1. Fold together chopped cookies with 2 cups (8 oz) whipped topping. Set aside. 2. Unwrap ice cream sandwiches. Create a layer of 6 ice cream sandwiches. 3. Top with an even layer of the cookies and cream mixture. 4. Add the final layer of ice cream sandwiches. 5. Frost the entire cake with the remaining whipped topping. 6. Decorate the cake with sprinkles. You can also garnish with chocolate or caramel syrup if desired. 7. Freeze until ready to serve. Fruit salads are wonderful in the summer. is cake was served with refreshments aer church. It was delicious and very easy to make – a great summer dessert.
