14 | THE COLONY NEWS | FEBRUARY 2024 | What's Cookin'? Instructions: 1. Preheat oven to 425 degrees. Crack eggs into a bowl, keeping yolks intact. 2. Grease a 9-inch glass baking dish. Arrange avocado halves, resting them along edge so they won't tip over. Gently place 1 egg yolk into each avocado hole. 3. Season each avocado with herbs, salt and pepper. Spoon egg white into each hole until full, drizzling a little on edges of avocados. 4. Gently place baking dish in preheated oven and bake until eggs are cooked, about 15 minutes. Sprinkle bacon over avocado. Instructions: 1. Fry sausage, onion and pepper until cooked, and drain. 2. Add cans of 3 vegetables, then kidney beans. Add water to desired consistency. Total cooking time: 30 minutes. Serves 8-10. Optional: add 1 cup barley. Other types of beans such as cannellini, garbanzo or chickpeas can be substituted. Eggs in Avocado Sausage Soup Ingredients: Ingredients: • 4 small/medium eggs • 2 avocados, halved and pitted • 2 tsp dried herbs or 1 tbsp fresh (chives, parsley, basil, thyme) • Course salt and pepper to taste • 2 slices cooked bacon, crumbled • 1 roll/1 lb. spicy pork sausage • 1 chopped onion • 1 chopped pepper (any color) • 1 15 oz can corn • 1 15 oz can green beans • 1 15 oz can kidney beans, drained • 1 15 oz can diced tomatoes Be on the lookout for great recipes and submit them with your name or that of the cook in case there are questions. Spread berries over bottom of dish, reserving a few to scatter on top. 2. In a medium bowl, whisk eggs, cream, milk, salt, vanilla and almond extracts, ¼ c melted butter and sugar. Si flour, add to mixture, then mix well. Pour batter over the berries. 3. Bake for 35-40 minutes until the top is brown, puffed and firm. Top with sied powdered sugar, whipped cream and reserved berries. Makes 8 servings. Ingredients: • 1 c fresh blueberries • 1 c fresh blackberries • 1 c fresh raspberries • ¼ c plus 1 tbsp unsalted butter, melted and divided • 3 eggs • ½ c heavy cream • 1 c whole milk • ¼ tsp sea salt • ½ tbsp vanilla • ¼ tsp almond extract • ¾ c sugar • 1 c flour • 1-2 tbsp powdered sugar • Whipped cream for garnish I found this recipe in the Costco magazine. Clafoutis is a crustless French flan dating back to the 1800s. I love things French, aer living there for a year, so I made it for anksgiving last year along with a couple of pies. e following is a soup recipe I received from my niece Sandy in Ohio. It sounds like an easy recipe, which all of us like. Ken Luekens submitted this recipe for a simple, quick breakfast or other meal. If you can't find perfect avocados, buy hard ones, and 1-2 bananas.
