• 2 ½ lbs firm Fuyu persimmons • 2 tsp baking soda • ½ c butter, softened • 1 2/3 c sugar • 2 eggs • 2 tsp lemon juice • 2 tsp vanilla • 2 c flour • 1 tsp baking powder • 1 tsp salt • 1 tsp ground cloves • 1 tsp cinnamon • ½ tsp nutmeg • 1 c chopped walnuts • ¾ c raisins 18 | THE COLONY NEWS | MARCH 2024 | What's Cookin'? Instructions: 1. Preheat oven to 350 degrees. Cook spaghetti according to package directions. Meanwhile, in a large skillet cook beef, green pepper and onion over medium heat until meat is no longer pink. Drain spaghetti and add to meat mixture. 2. Transfer mixture to a greased 9 x 13" baking dish. Cover and bake for 30 minutes. Uncover and sprinkle with cheese. Bake until cheese is melted, about 5 minutes longer. Makes 12 servings, 259 calories each (not bad). Instructions: 1. Wash chicken. Add herbs and spices to taste. 2. Put in preheated oven. 3. Go on Facebook. Confetti Spaghetti Blackened Chicken Ingredients: • 1 pkg (12 oz) spaghetti (angel hair okay to use) • 1 ½ lb ground beef • 1 medium bell pepper, chopped • 1 medium onion, chopped • 1 can (14 ½ oz) sliced tomatoes, undrained • 1 can (8 oz) tomato sauce • 1 tbsp brown sugar • 1 tsp salt • 1 tsp chili powder • ½ tsp pepper • ¼ tsp garlic powder • 1/8 tsp cayenne pepper • ¾ c shredded cheddar cheese Be on the lookout for great recipes and submit them with your name or that of the cook in case there are questions. You should have 3 cups. Blend with soda and set aside. 3. Using an electric mixer, beat butter with sugar until blended. Add eggs, lemon juice and vanilla. Beat until fluffy, then stir in fuyu mixture. 4. In a separate bowl, stir together flour, baking powder, salt, cloves, cinnamon and nutmeg. Add to persimmon mixture and stir just until blended. Stir in nuts and raisins. 5. Pour batter into bundt pan. Bake for 55-60 minutes, or until toothpick inserted in center comes out clean. Cool in pan for 15 min., then turn out onto a wire rack. Ingredients: This was my first taste of persimmons. I had this cake at church and loved it, so I asked for the recipe. I was also given a bag of persimmons to make the cake myself. I made it for Social, and it was popular for its moistness and unique flavor. Persimmons have a short season, and it's often difficult to find them in the market. I've heard Barons carries them. If you or someone you know has a persimmon tree, let me know. I want one myself! The following recipe is from Kathy Stevens. It sounds pretty easy. I hope you enjoy it.
