What is a mug cake? It is a sweet snack/dessert that is guaranteed to stop your craving for a little something sweet, and it can be made in a few minutes with ingredients that are probably in your pantry. Bonus: when the kiddies come to visit, you can score major points and entertain them by letting them help make their own cakes! Prep time: 5 minutes; Cook time: 90 seconds; Total time: About six minutes 1. Lightly butter a 10-to-12-ounce microwave safe coffee mug. 2. Add flour, sugar, baking powder, and salt to mug and mix until well combined. Pour in melted butter, milk, and extract, stir until the mixture is well combined and smooth. Be sure to scrape the bottom of the mug to incorporate all the dry ingredients. 3. Cook in microwave oven for approximately 90 seconds or until the cake is firm, but springs back when you lightly touch the top. Carefully remove the cake from the microwave and let cool for at least one minute before eating. Serve as is or top with your choice of toppings such as ice cream, whipped cream, fresh fruit, canned fruit, frozen fruit, pie filling, hot fudge or caramel, sprinkles, chopped nuts, etc. Variations: 1. Confetti - Add 1 to 2 teaspoons rainbow sprinkles to mug with dry ingredients. 2. Chocolate – Decrease flour by 1½ teaspoons and mix 1½ teaspoons baking cocoa powder to the flour. 3. Chocolate chip - Add 1 to 2 teaspoons mini or regular chocolate chips to mug with dry ingredients. NOTES Cook one mug cake at a time. Use a microwave-safe10 to 12oz mug. Do not fill mug more than half full. Recipe is based on 1000-watt microwave, adjust cook time for higher or lower wattage oven. Experiment with ingredients using flavors and ingredient you prefer. For example, substituting brown sugar for granulated will produce a slight caramel flavor. Phoenix and Griffin, Irene's great- nephews, really like their mug cakes!
