• 2 qts beef broth and water • 2 beef bouillon cubes • 1 tsp salt • ½ tsp pepper • 1 tsp celery salt • 1 tsp oregano • 1 tsp marjoram • 1 lb ground beef • 1 peeled and diced potato • ½ c rinsed pearl barley • 1 16 oz can kidney beans • ½ c uncooked salad macaroni • 1 carrot, peeled and grated • 1 c peas, canned or frozen • 1 small (8 oz can) tomato juice • 1 16 oz can stewed tomatoes, blended in blender • 1 c canned or frozen corn • ½ onion, chopped • 1 c frozen string beans, chopped • 1 stalk chopped celery 18 | THE COLONY NEWS | JUNE 2024 | What's Cookin'? Instructions: 1. Preheat oven to 325 degrees. Combine rub ingredients and mix well. Yields ¾ cup. Use 2 tbsp for recipe and save the rest for future use. 2. Heat a large skillet over medium heat. Add the bacon and cook, stirring until somewhat crispy and its fat has rendered. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain, leaving fat in the skillet. 3. Add the pepper and onion to the skillet and cook, stirring until softened, about 6 minutes. Transfer mixture to a large baking pan. 4. Add the bacon, beans, pie filling, barbecue sauce and rub to the pan. Mix to combine and bake, uncovered, until hot and bubbly, about 1 hour. Instructions: 1. Blend cake mix, butter and eggs. Mix in nuts. 2. Spread batter into a greased and floured 13" x 9" pan. 3. Mix all ingredients for icing together. Then pour icing on top of the cake batter. 4. Bake at 350 degrees for 45 minutes. Jack's Peach BBQ Beans Neiman Marcus Cake Ingredients: BBQ Rub: Cake Ingredients: Icing Ingredients: • 8 strips bacon, cut into 1-inch pieces • 1 red bell pepper, seeded and chopped • 1 lg yellow onion, chopped • 1 #10 can (about 6 lbs 12 oz) Bush's baked beans • 3 c canned peach pie filling • ½ bottle barbecue sauce • 2 tbsp Jack's Old South BBQ rub • ¼ c brown sugar • ¼ c sweet paprika • ¼ c kosher salt • 3 tbsp black pepper • 2 tsp garlic powder • 2 tsp onion powder • 1 tsp cayenne pepper • 1 tsp dried basil • 1 box cake, any flavor • 1 stick butter • 2 eggs • 1 c chopped nuts • 1 8 oz pkg cream cheese, softened • 1 16 oz box powdered sugar • 1 egg Be on the lookout for great recipes and submit them with your name or that of the cook in case there are questions. Ingredients: This recipe was submitted by Marian Cobb with permission from her friend and neighbor Marilyn Gordon, who cooked it often for her children when they were growing up. Marian freezes portions for future use. This recipe has been around for a while. Neiman Marcus is still in business, but I'm not sure if they still have a restaurant. These cake recipes using boxed cake mixes are great, and so easy to make These really should be called Dick Castle's BBQ beans. He made them for the recent Eclipse party. They got rave reviews, and I was asked to print the recipe. You will note that the recipe feeds a crowd. You're on your own when it comes to cutting it down for a smaller group, although halving it shouldn't be too difficult. Hamburger Soup By Joyce Hansen
