Bon Appétit! ~ Raelene Kretchman Calling all Happy Cookers! Get ready to fire up those grills and join us for our June Meeting, which promises to be a sizzling BBQ bash! The scent of summer is in the air, and we're gathering at the South Clubhouse on June 28 at 11 am to celebrate the season in style. Don't miss out on the fun – mark your calendars and bring your appetite! As we gear up for our June Meeting and the start of summer festivities, let's embrace the dual celebrations that define this vibrant month. June honors both the achievements of graduates and the dedication of dads, recognizing their hard work and support. So, as we come together to revel in these milestones, let's bask in the joy of family gatherings and relish the sizzle of expertly grilled delights. Let's kick off our celebration with one of my favorite recipes: Lemon Herb Grilled Chicken. Its zesty marinade and aromatic herbs ensure it's a crowd pleaser. Start with 4 boneless, skinless chicken breasts, 2 lemons (juiced and zested), 3 cloves of minced garlic, 2 tablespoons each of chopped fresh rosemary and thyme, ¼ cup of olive oil, and salt and pepper to taste. Prepare the marinade by combining the lemon juice, zest, minced garlic, chopped herbs, olive oil, salt, and pepper. Marinate the chicken for at least 30 minutes or overnight for deeper f lavor. Grill the chicken for 6-8 minutes per side until cooked through and beautifully grilled. Whether paired with a crisp salad, grilled veggies, or your favorite sides, this recipe embodies the essence of June's culinary delights. So, fire up the grill, gather your loved ones, and savor the f lavors of the season with this irresistible dish.
