| OHCC LIVING | JULY 2024 | 37 Sparkling wines made using the traditional method, also known as Méthode Traditionnelle or Méthode Champenoise, is the gold standard in sparkling wine production. This intricate process, involving a second fermentation in the bottle, results in complex flavors and fine bubbles. Many of the world's finest sparkling wines are made using this method, each reflecting unique regional characteristics and grape varieties. Champagne, the quintessential sparkling wine, hails from the Champagne region of France. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, Champagne is renowned for its high acidity and complexity. Extended aging on the lees (dead yeast cells) imparts flavors of brioche, toast, and citrus, creating a wine with remarkable depth and aging potential. Only sparkling wines produced in this specific region can be labeled as Champagne. Cava, Spain's answer to Champagne, is predominantly produced in Catalonia. The traditional method is used with local grape varieties such as Macabeo, Xarel•lo, and Parellada. Cava is typically crisp and clean, featuring flavors of green apple, citrus, and occasionally a hint of nuttiness. It offers excellent value and a unique Spanish twist on traditional sparkling wine. Crémant is a category of French sparkling wines made outside the Champagne region but still using the traditional method. Examples include Crémant de Bourgogne, Crémant d'Alsace, and Crémant de Loire. These wines are often lighter and more fruit- forward than Champagne, showcasing the diverse terroirs of France. Franciacorta, from Lombardy in Italy, rivals Champagne in quality. Made from Chardonnay, Pinot Nero, and Pinot Bianco, Franciacorta wines are elegant and creamy, with flavors of ripe fruits, nuts, and sometimes vanilla from oak aging. South Africa's Méthode Cap Classique (MCC) wines are crafted using Chardonnay and Pinot Noir. These sparkling wines are bright and lively, with flavors ranging from citrus and apple to more complex notes of brioche and toast. The traditional method's meticulous process ensures these sparkling wines possess distinct qualities, making them celebrated choices for a variety of occasions around the globe.
