• 1 pkg yellow cake mix • 1 can (20 oz) crushed pineapple • 1 can (21 oz) cherry pie filling • 1 ½ sticks of butter, cut in thin slices • 1 cup chopped pecans (optional) • 1 tsp salt 22 | THE COLONY NEWS | AUGUST 2024 | What's Cookin'? Instructions: 1. Combine dressing ingredients. 2. Combine spinach, strawberries, onion, and feta cheese. Add crumbled bacon. 3. Refrigerate until ready to serve. Dressing should be added just before serving. 4. Add cooked chicken to serve as a main dish. Instructions: 1. Place chicken in a mixing bowl along with the cranberries, pecans and celery and toss together. 2. In a separate bowl, mix together the mayo, lemon juice, sugar, salt and pepper. 3. Pour mayo mixture over the chicken mixture and mix well. 4. Cover and refrigerate a few hours before serving. Strawberry Spinach Salad Cranberry Pecan Chicken Salad Ingredients: Dressing: Ingredients: • 5 cups baby spinach • 1 cup red onion, thinly sliced • 1 pint fresh strawberries, sliced (about 2 cups) • ½ cup crumbled cooked bacon • ¾ cup feta or goat cheese • 3 Tbsp Balsamic vinegar • ¼ cup olive oil • 1 tsp Dijon mustard • 2 tsp maple syrup • ¼ tsp salt • 1/8 tsp ground black pepper • 3 cups cooked shredded chicken • ½ cup dried cranberries • ½ cup chopped celery • ½ cup chopped pecans • 1 ½ cups mayonnaises • 2 Tbsp lemon juice • 2 Tbsp sugar • ½ tsp salt • ¼ tsp black pepper Instructions: 1. Grease 9" x 13" pan. Dump pineapple into pan, add pie filling and spread. Dump cake mix onto cherry layer, spreading evenly. Sprinkle pecans and/or flaked coconut over top (optional). Put slices of butter over the top. 2. Bake at 350 degrees for 45-55 minutes until brown. Good warm or cool. Great served with whipped cream, Cool Whip or vanilla ice cream. This chicken salad is great as a main dish served over lettuce or used in a sandwich on a croissant or other rolls.
