• 4 cups broccoli florets • 2 cups seedless grapes cut in half • 2/3 c sliced almonds • 1 c celery, chopped • 4 green onions, chopped • 8 slices bacon, cooked crisp and crumbled • 1 c mayonnaise (or ½ c mayo+½ c ranch dressing) • 2 tbsp white vinegar • ½ c maple syrup or brown sugar • ¼ tsp curry powder 22 | THE COLONY NEWS | OCTOBER 2024 | What's Cookin'? What's Cookin'? Instructions: 1. Preheat oven to 350 degrees. 2. Mix pumpkin in cake mix with a heavy spoon. Mixture will be very thick. 3. Add raisins and/or chopped nuts if desired. 4. Spoon batter into prepared muffin cups, filling right to the top. Bake for 18-22 minutes, until a toothpick comes out clean. I made mini muffins, which baked for only 11 minutes. It made 24 minis, plus 6 regular size. Variation: Add 3 eggs. Makes 18 regular-size muffins. Super Easy Pumpkin Spice MuŠns Ingredients: • 1 box Spice Cake mix • 15 oz can of pumpkin • ½ c raisins and/or nuts if desired Instructions: Mix dressing and add to other ingredients. Optional: Blanche or steam broccoli for 2 minutes to make it a little softer. Ingredients: Dressing This salad recipe was submitted by my neighbor, Birgid Skoftebye. It sounds good. I was asked to repeat this great muffin recipe from two years ago, so here it is! Broccoli Salad By Joyce Hansen Instructions: 1. Begin by finely crushing Oreos in blender or food processor. Place in a ziplock bag and add melted butter. Mix until well combined. 2. Press into bottom of an 8x8 inch pan, spreading out to cover the entire bottom of the pan. 3. In a medium bowl, blend cream cheese, margarine/butter, powdered sugar and ½ of the Cool Whip. Blend well and pour over lemon/Oreo crust. 4. In another bowl, make the pudding by adding milk to the instant pudding mix. Whisk together until pudding thickens. Pour over the fine cream cheese layer. Refrigerate for at least 5 minutes. 5. Top off with the rest of the Cool Whip. 6. Refrigerate at least 1 hour before serving. Add lemon slices on top if desired. Lemon Lasagna Ingredients: • ½ pkg lemon Oreo cookies • 3 tbsp butter, melted • 8 oz Cool Whip • ¼ c margarine or butter • ½ c powdered sugar • 4 oz cream cheese, softened • 1 ½ c milk • 1 3.9 oz pkg lemon instant pudding Linda Kight served this dessert at the Racquet Club luncheon last month and it was quite a hit.
