38 FOUR SEASONS BREEZE | DECEMBER 2024 • 1 cup granulated sugar • 1 cup all-purpose flour or gluten-free flour • 1 teaspoon baking soda • 1/4 teaspoon salt • 1/2 teaspoon nutmeg • 1/2 teaspoon cinnamon • 1/4 cup room temperature fat; shortening, butter, or coconut oil • 1 egg • 1/2 cup milk • 2 ½ cups apples, peeled, cored, and chopped • Optional toppings: Whipped cream, nondairy whipped topping, heavy cream, or ice cream • Optional cinnamon sugar topping may be used instead of previous toppings • 2 teaspoons granulated sugar • 1/2 teaspoon cinnamon INGREDIENTS DIRECTIONS The recipe for this month was submitted by my neighbor and baker extraordinaire, Sherry Mounts. The recipe has been in her family for years. She remembers her mother and grandmother making desserts in the kitchen. She said there was always a dessert at every meal and today when she makes a dessert recipe, the smells transport her back to her childhood. This recipe can be made dairy and gluten free. 1. Select a baking pan (see note below). Set aside. Preheat oven to 300 degrees for cast iron pan or 350 for all other pans. 2. Place the dry ingredients (sugar, flour, baking soda, salt, nutmeg, and cinnamon) in a medium bowl. Whisk together until well combined. Set aside. 3. Using a handheld mixer, beat the wet ingredients (fat, egg, and milk) until well blended. Add the dry ingredients to the wet and mix well. Fold in the sliced apples, stirring until well combined. 4. Pour into the baking dish. Sprinkle the top with the cinnamon sugar mixture, if using. 5. Bake for 30-35 minutes in the preheated oven until the top is golden brown and a toothpick inserted in the center comes out clean. Remove from oven. Serve warm with your choice of toppings or as is with no toppings. NOTE: This pudding may be baked in a round or square 8" or 9" pan. Cast iron and other dark baking dishes will require a shorter cooking time. Light-colored ceramic or glass will require a longer cooking time.
