In bottom of greased 9"x13" pan, add a scant amount of meat mixture. Tear tortillas into 4-6 pieces and spread generously on meat mixture. Add 1/3 of cheese. Add more torn tortillas. Add more meat mixture, then add 1/3 cheese. Add more torn tortillas. Top with the remaining meat mixture. 3. Bake 30-45 minutes at 350 degrees, top with remaining cheese for the last few minutes of baking. Taco Casserole Ingredients: • 2 lbs ground beef • 2 red peppers, chopped • 1 chopped onion • 6 tsp taco seasoning • 2 tsp oregano • 4 cups salsa • 6 cups shredded cheese • 2 cans black beans, drained and rinsed • 18 corn tortillas Sharen Hollon has made this for Tuesday Night Social several times. It's very popular and a good dish to take to a potluck. By Joyce Hansen Instructions: 1. Preheat oven to 425 degrees. Spray mun pan with nonstick spray or line with cupcake liners. Set aside. 2. Make crumb topping: Mix brown and granulated sugar, cinnamon and melted butter in a small bowl. Add our and mix with fork until crumbs form. Refrigerate while you make mun batter. (Cold crumbs hold shape better when baking.) 3. Make the muns: Whisk our, baking soda, baking powder, cinnamon and salt in a medium bowl and set aside. 4. In a large bowl beat butter, granulated and brown sugar on high speed until smooth and creamy, about 2 minutes. Add orange zest and beat on medium for 1 minute. Add eggs, yogurt/sour cream and vanilla. Beat for 1 minute, then turn up to high speed until mixture is combined and creamy. 5. Add dry ingredients, orange and milk and beat until no our pockets remain. Fold in cranberries. Avoid over-mixing. Batter is thick. 6. Spoon batter into prepared mun cups, lling to the top. Spoon crumb topping on each, gently pressing down so it sticks. 7. Bake for 5 minutes @ 425 degrees, then reduce temperature to 350 and bake for 16-19 minutes longer, until toothpick comes out clean. Total time in oven is 21-24 minutes. 8. Allow muns to cool for 5 minutes, then transfer to wire rack. Cool for 15 minutes before icing. Make icing: whisk confectioners' sugar and orange juice together and drizzle over muns.
