FOUR SEASONS BREEZE | APRIL 2025 33 Egg prices have cracked $7.75 or higher per dozen, leaving cooks scrambling for alternatives. The crisis is also reshaping how we cook, what we eat, and where we obtain our food. As prices soar, shoppers are adapting by getting creative in the kitchen. Higher prices are forcing shoppers to adjust. On platforms like Reddit and YouTube users are sharing tips for finding affordable options or swapping out eggs in recipes. Consumers are also scouring food-related websites such as Food Network, which are publishing articles on good substitutes for eggs. Listed below are three sites to get you started: • www.foodnetwork.com/how-to/packages/food-network- essentials/the-best-egg-substitutes-for-baking-and-cooking • www.thekitchn.com/best-egg-substitutes-baking-23003895 • www.bbcgoodfood.com/health/special-diets/best-egg- substitutions Other ways to adjust are: Using egg substitutes: Many plant-based products in grocery stores offer affordable options that work well for cooking and baking. Getting creative in the kitchen: Chefs and home cooks are embracing trends like eggless desserts, such as chocolate mayonnaise cake, or substituting mayonnaise for eggs in baked goods. Explore local options: Farmers' markets, small family farms, backyard chicken coops, and egg stands are thriving. Stock up: If you do find a bargain buy on eggs, remember that eggs have a short life that might be extended to two months if stored under optimal conditions. Wash and dry the egg. Store them in their original carton in the coldest part of the refrigerator, at or slightly below 40 degrees F. To test for freshness: Place eggs in water. If eggs sink to the bottom and lie flat, they are fresh. If they stand on one end at the bottom, they are a few weeks old but still edible. If the egg floats to the surface, it is no longer fresh. ~ Irene Welkler If you have any questions, please feel free to call or text me at (951) 275-7081. High egg prices are no yolk
