Thanks to Dr. Mondkar at Rancho Family Medical, I've
discovered this delicious and simple Spiced Samosa recipe that
may help alleviate symptoms of inflammatory conditions, like
arthritis, due to the ingredients curry powder and ginger.
Ingredients:
• 3 large Yukon Gold potatoes, peeled, chopped, and boiled
until semi-soft.
• ½ cup frozen or canned peas (I use more because I love
peas).
• ¼ cup onion, chopped
• 1 ½ teaspoon curry powder (more or less depending on
your taste).
• ½ teaspoon ground ginger
• ½ teaspoon of salt and a couple of dashes of flour
• ¼ teaspoon black pepper
• 3 tablespoons butter
• 2 tablespoons of olive oil
Directions:
1. In a small saucepan, cook the peas and onions in one
tablespoon of butter over medium heat until onion softens, about
5 minutes.
2. Place cooked, and drained potatoes in a large bowl. Add
the cooked onions and peas, the curry powder, ground ginger,
salt, pepper and one tablespoon of butter. Use a potato masher to
mash it all up.
3. Place the flour and a few dashes of salt in a small bowl and
set aside. Line a plate with paper towels. Do not use a dish towel –
turmeric (the basic ingredient in curry) stains like mad!
4. Heat the remaining two tablespoons of butter and olive oil in
a frying pan over medium heat.
5. Form the potato mixture into small patties, dredge in the
flower and place a few patties at a time in a sizzling pan. Cook
until golden brown, about three minutes on each side.
6. Once they are cooked, place them on the paper towel lined
plate to drain. This recipe makes about 8 – 10 patties.
You do not need exact
measurements for any of
these ingredients. Adjust
to your taste.
Other spices to enjoy
for reducing inflammation
are turmeric, ginger,
chili pepper, garlic, and
coriander.
