30 | LIFE IN SOLERA | MAY 2025 | Spring has sprung! The Solera Bon Appetit Cooking Club's event in April celebrated spring with a demonstration of three spring salads by member Patty Meinhardt. She started with a "leaf-free" salad with a quinoa base that is credited to Jennifer Anniston, and a salad featuring spring greens, and an Asian salad. In addition, she prepared five of her personal favorite salad dressings for the salads we served to members. All were delicious! Pat Parker, Terry Commeans, and others dished up 90 bowls of iceberg lettuce and spring mix for our members. They were treated to a "salad bar" that included a variety of salad toppings and homemade dressings so that each person could enjoy their favorites. During the demonstration, Patty entertained us with interesting salad- making facts including how to keep lettuce fresh. As usual, we ended our event with cookies and the presentation of raff le baskets to the winners. You may know that all proceeds from the raff le baskets are used for a scholarship to a student in the Beaumont High School Culinary Program. The student is chosen by her teachers for this honor. Solera Bon Appetit Cooking Club is open to new members year-round, and we would love to see others join us at our next meeting on Fri., May 2 from 1 to 3 pm in the Clubhouse. Do you know that a delicious cheesecake may be produced in a microwave? Lane Joel will demonstrate his talents and will provide samples to participants. There will be no cost to members for this event. Please be aware of the need to RSVP by the date stated in the f lyer, usually a week before the event, so we can provide appropriate accommodations for each of you. Solera Bon Appetit dues are $30 for the year, and we meet on the first Friday of each month in the Clubhouse.
