TERRAMOR BEYOND THE GATES | FALL 2026 25 INGREDIENTS: • 4 cups bran cereal, (Cascadian Farm Raisin Bran preferred brand, check sugar content) • 2 cups milk, (any kind, even plant-based) • 1/2 cup oil, (whatever kind you have, even light olive oil) • 2 eggs, (vegans can use cashew cream) • 2 cups flour, (I use white unbleached with 1 cup whole wheat flour. I put a few tablespoons of ground flaxseed in a cup, then add the flour) • 1/2 cup sugar, (white or dark brown) • A splash of molasses (use a bigger splash if you are using white or light brown sugar) • 1 tsp salt • 1 tsp baking powder • 1 tsp baking soda *Secret ingredient - jar of baby food prunes (shhh! Don't tell anyone, but because some people think they do not like prunes, but they are delicious and give a great taste) OPTIONAL ADD-INS: • 1 -2 teaspoons cinnamon or pumpkin pie spice, maybe add a little ginger, nutmeg or cardamom, whatever you like! • Fruit such as raisins, maybe also a chopped apple, few chopped dates, a grated carrot or an overripe banana. INSTRUCTIONS: 1. Mix bran with milk. Add oil, eggs and baby food. In a separate bowl, mix flour, sugar, soda, powder, and salt. Combine dry ingredients slowly into wet until fully combined. 2. Fill greased muffin tins 2/3 full. If not using topping, fill 3/4 full. You can use muffin liners if you want, but a greased tin will give it a nice crust. 3. Add topping before baking. 4. Bake at 400 degrees for approx. 15min (depending on oven). I start checking around 15 to 20 minutes. If not sure, take one out, cut it, spread with butter and eat it. Maybe eat a second one to be sure! OPTIONAL TOPPING • 1/4 melted butter • 1/3 cup brown sugar • 1/4 white sugar • Mix all and add a little to each muffin, spreading it on top. Add sliced or chopped nuts if desired. From the Kitchen of Donna Mihovilovich This is an original recipe I created for a friend who had Multiple Sclerosis many years ago. I also make these for friends who are coming out of the hospital. Not only are they full of fiber but are delicious! My husband says it is one of the best things I bake!
