Chef 's Corner By Randy Balt Maple Lover's Spinach Salad Using fresh fruit in a salad provides an elegant alternative to the generic salads use of lettuce and tomatoes. You can use berries, melons, stone fruits or anything else you like depending on your personal tastes. This recipe calls for spinach, but a spring mix can work just as well. You will enjoy the snappy vinaigrette. Ingredients Vinaigrette Directions Spinach Feta cheese Candied pecans Raspberries Blueberries Maple vinaigrette dressing (see below) Shake jar vigorously to mix ingredients well. Store in the refrigerator for up to one week. Maple Vinaigrette Recipe 2 tablespoons extra virgin olive oil 1 tablespoon cider vinegar 2 tablespoons pure maple syrup 1 1/2 tablespoons Dijon mustard Salt and pepper to taste Salad Directions Combine all ingredients and add dressing. Serve chilled. Note: This would also be good topped with grilled chicken. Did You Know? Did you know that there are only two "Friday the thirteenth" days in 2013? One of them is in this month of September and the other is in December. If you have triskaidekaphobia, get it out of your system this month. You would hate to stay inside on a festive day in December! Did you know that September has some very special days such as Labor Day, Grandparents Day, Patriot Day and religious holidays such as Rosh Hashanah and Yom Kippur? A quick check of the Internet also disclosed that it has some bizarre and unique holidays: Be Late for Something Day (Sept. 5), Fight Procrastination Day (Sept. 6), Teddy Bear Day (Sept. 9), National Video Games Day (Sept. 12), Blame Someone Else Day (Sept. 13), and International Talk Like a Pirate Day (Sept. 19). Although it seemed at first glance like another wacky daily celebration, I discovered that Emma was the world's first female telephone operator. In September 1878, she was hired by the Boston Telephone Dispatch Company. Prior to her employment, men who had previously been used as telegraph operators were hired. However, the men who were used to working without actually talking to others, lacked patience; their behavior was not acceptable for live telephone contact. Emma's career with the telephone company lasted for more than 30 years. She pioneered hiring women in the communications workplace and she earned a whopping $10 a month for a 54 hour week… that works out to 4¢ an hour! Did you know that K. Hovnanian has added four new floor plans to our model selection? As of July 13, three of the model homes were formally unveiled in a well-attended Open House. The fourth plan, the Lunette, has details for the 2,283 square foot structure, but did not have a model built. Plans which do have a model you can see and explore include the Montage, 2,411 square feet with a 2 ½ car garage, the Mosaic at 2,482 square feet and a 2 ½ car garage, and the largest, the Rosette, at 2,700 square feet.
