Arrange the eggs in a single layer in the bottom of a pan and cover completely with room-temperature water. 2. Heat on high until water begins to boil, reduce heat, boiling gently for 8 minutes. 3. Remove pan from heat and run cold water over eggs for 1 minute to begin the cooling process. Then give the eggs an ice-water bath for an hour. Note: If you are going to use them right away, drain the eggs, shake them in the pan to crack the shells, and then plunge them into an ice-water bath to cool for a few minutes. Chef 's Corner By Randy Balt Hard-Boiled eggs How do you cook hard-boiled eggs? It's really quite simple as long as you know what your ideal hard- boiled egg is. For me the whites should be firm and not creamy. The yolks should be completely set and mostly yellow, with maybe a bit of orange in the center. And no grayish-green ring around the yolk. Do you know why the grayish-green ring appears around the yolk sometimes? The ring forms when you overheat the egg, causing hydrogen and sulfur in the egg white to react and form hydrogen sulfide gas. The hydrogen sulfide reacts with iron in the egg yolk to form a grayish-green compound where the white and yolk meet. While the color isn't particularly appetizing, it's fine to eat. You can keep the yolk from turning green by chilling the eggs as soon as they have finished cooking. One way to do this is by running cold water over the hot eggs as soon as the cooking time has elapsed. There are many recipes out there for hard-boiled eggs, but this one produces the results I'm looking for. I hope this helps. Activities Director Corner By Cindy Graves, Activities Director I love the weather in June, the cool summer breezes, the fragrance of flowers in the air and the sense that something magical is about to happen… guess what? Something magical is about to happen! Come on down and join us, June 21 at 6:30 pm in the Amphitheater! The Performing Arts Club is presenting The International Brotherhood of Magicians, for an outdoor evening of magical amazement. There will be only one show since, unlike our movie theater venue, we can fit close to 200 people at a time. Feel free to bring the grandkids if you like; I'm sure that they'll love the show too. There is no cost to attend, so you can't beat the price! The Fourth of July is right around the corner and with that comes our giant 4th of July day of in-house club competition, along with an awards ceremony, community potluck, and patriotic summer show put on by the Performing Arts Club. There will be a sign up sheet out in the lobby for those wishing to attend. There is no cost to attend this event either, but we need to know how many to set-up and buy for, so your signing up is greatly appreciated! If your club is interested in competing or being a part of the awards ceremony, please sign up for that as well. Space for play in the Lodge is still an issue, so we need to have everyone sign up for their room time. If your club/group would like to compete earlier in the week or during your regular club time instead of on the day of the 4th, you can simply let me know whether your club needs a trophy to present at the awards ceremony. This is always a fun part of the day, and the clubs really get into it. I know this is going to seem like old news now, but I do want to give a big hand to PAC for the rousingly funny PG-55 show that they did last month. It was probably one of the hardest I have laughed in ages (And you know that I'm a regular laugher)! As Melody Seewoster said, "Watching the audience laugh was nearly as funny as watching the show." There were people doubled over gasping for air, there were people crossing their legs to avoid accidents and there was one guy, laughing so hard his soda was coming out his nose. Literally everyone who performed, including Teri DiMarino, was spot-on throughout the night! It just goes to show you, how important the synergy between performers and the audience is. The Thursday rehearsal before the show gave me a bit of concern, but I'll tell you, the second the audience showed up on Friday, the funny bugs were released and everyone got bit! Great job PAC! It was a privilege to get a chance to be a small part of this hilarious evening. June is going to be a great month with Karaoke, The Doo Wop Dolls at the Amphitheater, The Magic Show, Juneteenth and the Luau. I'm looking forward to seeing you all around the Lodge!
